What’s for supper? Vol. 354: That cranberry tart

Welcome to the post Thanksgiving debriefing! How much butter did you go through? I think we did six pounds, but I wasn’t really keeping track. I’ll let, ahem, my body keep the score. 

This year on the internet, the big fuss seemed to be that brilliant scarlet cranberry curd tart, and ube pie. (I’m sure some of you have been making these for years, but they were suddenly everywhere this year.) We’re huge cranberry fans here (the kids were snacking on raw cranberries — RAW CRANBERRIES — while working on Jesse Tree ornaments today), so even though I bought eight cans of cranberry sauce and made two dozen cranberry muffins, I knew what I had to do. And that was make some tarts. 

First, a quick run-down of the rest of the week:

SUNDAY

Damien and I went to see Moe’s directorial debut, Moriarty’s Daughters.

It was great! All of those kids (middle schoolers) were all in, and it was a complicated play, with tons of dialogue, scene changes, and choreography. Excellent work. 

The kids at home had french toast casserole (torn up leftover bread soaked in a milk, egg, vanilla, and sugar batter, and then baked in a buttered casserole dish with some more sugar and cinnamon on top) and I don’t know what else, and Damien and I went to The Winchester, I mean Chili’s, after the play. I really like Chili’s. It’s cheap, the food is reliable, and it doesn’t draw as much of a “OMG Cayden, I found my stepmom’s Visa and we can get as many Berry Merry Daquiris as we want!” crowd as Applebee’s tends to. I had some kind of chipotle salad nonsense. And then we went to Walmart to get some mouse poison. THREE venues, quite an evening out for Mr. and Mrs. Fisher.

MONDAY
Pizza

One pepperoni, one olive, and one half cheese, half garlic and roast red peppers.

On Monday evening, I suddenly realized I had promised to send in a pie for the school thing, so I made a slightly weird apple pie.

I forgot to put my name on the pie plate, so farewell to thee, pie plate. 

TUESDAY
Hot dogs

On Tuesday, I started Thanksgiving baking in earnest. I made a two pies and two dozen cranberry muffins. 

First I made an apple pie.  I made a big slab pie in a casserole dish. 

The crust design was, again, a little weird. First I made a lattice crust, but with broad strips of dough, rather than narrow ones. It looked a little plain, so I added some flowers and stems and leaves, and it still looked weird, but it wasn’t the only pie on my agenda, so I had to let it go. 

Then I made a pecan pie. I usually make a standard recipe with corn syrup and bourbon, but I decided to try a different one this year, because why not, from my friend Melanie. Gotta make up a proper recipe card, but in the mean time, here it is: 

* 1 cup brown sugar
* 1/4 cup white sugar
* 1/2 cup butter
* 3 eggs
* 1 tablespoon all-purpose flour
* 1 tablespoon milk
* 1 teaspoon vanilla extract
* 1 tablespoon white vinegar
* 1-2 cups chopped pecans
Directions
1. Preheat oven to 400 degrees F.
2. In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, vanilla, vinegar and nuts.
3. Pour into an unbaked 9-in pie shell. Bake in preheated oven for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for 30 to 40 minutes, or until done.
 

I sprinkled some extra pecans on top in a swirl pattern. The pie swelled up and came out with almost a crust on top, like on a baked custard. I think this is the clearest picture I have of it:

And I haven’t tried it yet! So I will have to report back soon. 

I also tried a new recipe for cranberry muffins. They usually come out with a nice flavor but too dense, so I tried the Sally’s Baking Addiction recipe. She usually has good recipes for light baked goods. I didn’t realize until after I filled the muffin tins that the recipe doesn’t include walnuts! Oh well. Next time, I’ll just add walnuts in. (Unless. . . that might make them less light. . . . hmm.)

It does have an orange glaze, which I thought that was lovely. It ran over the tops and ended up soaking the bottoms of the muffins, so they were very sticky and moist on the bottom and tender and cake-like inside, with lots of bright cranberries and bits of orange peel.

She also had the tip to save out some cranberries and sprinkle them over the tops before you put it in the oven, so they are more colorful. Definitely doing it that way from now on.

WEDNESDAY
Mac and cheese and kielbasa

Wednesday I made two pumpkin pies (just following the recipe on the pumpkin can, using the zoom feature on my camera so I could read the recipe on the pumpkin can) in pre-made graham cracker crusts, and two cranberry curd tarts, spanakopita, and vanilla and strawberry ice cream.

Then I put my feet up for a while, and then I made candied sweet potatoes and peeled ten pounds of white potatoes. Then I processed the last of the butternut squash from my garden

and candied some walnuts with honey and curry powder,

to make ice cream with the next day. Should have chopped them a bit more, but oh well. 

The pumpkin pies turned out fine. I made one moderately fancy with some leftover pecans and some crust cut in the shape of . . . this. 

I inquired on Twitter. I thought a brain hastening away was the most likely thing, but Joanne finally clued me in that they are turkeys that have been squashed in the drawer. 

Now I know! Anyway, here’s the pie:

I made spanakopita with two pounds of spinach (which is a LOT of spinach) and I just straight up used a house paintbrush to apply the melted butter to the phyllo dough sheets. 

I didn’t count how many I made, but the dough and the spinach and cheese filling ran out at about the same time, so that was a win!

Covered and put in the fridge for the next day. 

The cranberry tarts were next. Those were fun to make, but listen to me: START EARLY. This is a pie that needs to sit around a lot before you can even put it in the fridge. I followed the recipe from America’s Test Kitchen (limitless views here

The recipe has instructions for an almond crust, but I thought it would be pushing my luck to try so many new things; so I just bought two premade pecan crusts. 

You mix the cranberries with sugar and water

take a photo for social media (mandatory), and simmer them until they all pop

then separately whisk up some egg yolk and cornstarch, and put that and the cranberry mixture into the food processor and whir it all up

I’m here to tell you that you CAN fit a double recipe of hot cranberry curd into an eight-cup food processor, but make sure your affairs are in order first. 

 

Then you have to let it cool down to 125 degrees. This took quite some time! Then you add butter in and whir it up again, and press the mixture through a sieve

You save out a few tablespoons of the cranberry mix to be whipped up later with cream to decorate it, and you pour the rest of the cranberry mix into the crust, and let it sit at room temp for another four hours.

Then I covered it and put it in the fridge for overnight (it keeps well), and started on the ice cream, which I should have done earlier in the day, but what can one do. I made one batch of vanilla and one of strawberry

Mindful of the tip with the cranberry muffins, I saved some of the strawberries and sprinkled them on top. 

Then I somewhat grumpily made some mac and cheese and kielbasa for dinner.

After dinner, I made the candied sweet potatoes using this recipe from My Forking Life, except I sliced up an orange and cooked the slices along with the sweet potatoes. 

Then I peeled the white potatoes. I think it was at this point where, being a little tired, I had a little mishap with the potato peeler, which, hooray for fingernails, or else that would have ended differently. And hooray that I don’t care what my nails look like. 

And THEN I processed the butternut squash. I was following this recipe from Blue Apron, which calls for curried candied pecans, but I used walnuts instead. Look, some people make a shopping list, lose it, make another shopping list, also lose that, and then just go to the supermarket and buy everything that looks more or less Thanksgiving-y, and it more or less works out. I’ll tell you, though, every time I thought I had found my list, it turned out to actually be a paper with a drawing of a cat called SNUFFLES on it. Every damn time. I will swear to you that I threw it away, but then a few hours later I would be like, hey, where’s my list? And I would find it, and then –OH NO, IT’S SNUFFLES AGAIN. This was before I cut the tip of my finger off. 

This ice cream is somewhat labor intensive, because you have to process the squash and make the candied nuts, and the ice cream itself is the cooked custard type

but gosh it’s delicious. It’s sophisticated flavors and comfort food all in one. 

And then I put my whole ass in bed.

THURSDAY
THABKSGIVING!

Thursday! Thanksgiving itself! 

Damien was in charge of the turkey, the stuffing, and the gravy. The turkey was juicy and delicious, as always. We don’t have any special tricks, just lots of basting.

I’ll get her recipe when she comes home from work!

So on Thursday, all that was left for me to do was make mulled cider, bake the apple pie, cook the mashed potatoes, and bake the spanakopita, and finish making the squash nut ice cream.

I truly wish I had a second freezer and a second oven. But we just did a lot of juggling and shuffling and strategizing. I made the mulled cider in the Instant Pot (cinnamon sticks, cloves, halved clementines) and kept the mashed potatoes in the slow cooker, and I ended up bringing out hot dishes to the table as they finished baking, and it was nice! 

Some of my spanakopita triangles burst open, but there were no complaints. 

Everybody ate their fill and told funny stories.

 

But WordPress is being a bag of butts and won’t let me upload any more pictures! I’ll have to embed the rest from Facebook. 

After we ate, I whipped up the cranberry-flavored whipped cream, and Clara decorated the cranberry tarts with it. 

The ice cream was not my best effort. The vanilla and strawberry didn’t freeze properly in the ice cream maker, for some reason, so I put the churned ice cream in the freezer while it was still liquidy, which makes it freeze in a sort of splintery fashion. The butternut squash ice cream came out of the machine very unevenly frozen, for some reason. I think the dasher got stuck, and didn’t keep the ice cream churning, but I didn’t notice because there were so many other things making loud scronching noises at the time; so it was much more frozen in some spots than in others. The flavor was wonderful, though. It’s mellow and custardy, and the candied curried nuts give it a nice kick. I love this ice cream. 

So, we had a really good day. All our kids and Moe’s girlfriend came, and just about everyone was hungry and cheerful. 

We had our traditional annual fight about whether it’s traditional to watch National Treasure on Thanksgiving (it’s not, but it’s now traditional to fight about it), and ended up watching The Road to El Dorado. I made sure to point out to the kids that while Cortes is portrayed in a truly horrible light, really cruel and ravening, they shouldn’t think all Catholics are like that. Really, it’s just that all Spanish people are like that. They said okay Mama. They were so good about it that I didn’t go on my traditional “I’m sorry, HOW old is Chel?” rant. 

FRIDAY
Leftovers. Long live leftovers. I was planning to do yoga today, but I accidentally ate a bunch of pie, and I have learned that you can power through pie when you’re in downward facing dog, but it is not advisable. 

And that’s my story! If you didn’t make the cranberry curd tart but you think it sounds nice, make it for Christmas! It’s so pretty and bright, very tart indeed, and it was a big hit. Some people decorate it with sugared and candied fruits, or nuts, or rosemary, or whatever you want. The scarlet and the white really lend themselves to lots of elegant designs.

And I was thinking . . . . this would be amazing as the top layer of a cheesecake. Yes it would. 

No, I’m not doing yoga today. Maybe tomorrow. 

 

What’s for supper? Vol. 353: SOMEBODY in this house is possessed by soup.

Friday has arriven! It’s about damn time. And may I just say, my food pictures are really pretty this week. I tried THREE new recipes. One (butternut squash soup with coconut and spinach) turned out great, one (Turkish flatbread) was pretty bad, and one (cranberry chicken) was fine. That’s how you find out! 

Here’s what we had:

SATURDAY
Caprese chicken burgers; veg and dip

Quick frozen meal for shopping day, with a little extry to make it nice. Aldi’s chicken burgers are actually pretty good, for processed chicken patties. They have a pleasant texture and the breading is crip. So I cooked those and put out tomatoes and basil, olive oil and balsamic vinegar, salt and pepper, and then got into a protracted argument with a kid about cheese. This particular kid, see, is PAID to put the groceries away every week, and so you’d think that when I ask a simple question like . . 

you know what, never mind. If you have kids, you’ve heard enough. Anyway I found a little package of fresh mozzarella in the back of the fridge, and SOME of us had nice cheese on their sandwiches. Everyone else had pre-sliced whatevercheese.

I cut up a bunch of peppers and broccoli and set out a tray with French onion dip. No chips and no French fries! They said it couldn’t be done! But I’ve been snacking on leftover vegetables all week and only feel prey to clearance Halloween candy one time, so you tell me. 

SUNDAY
Omelets for kids; Chinese food for adults

Sunday, Moe and his girlfriend took me and Damien out to eat, just to be nice! Wasn’t that nice? We had an excellent Chinese meal at Cherry Garden in Keene. I had pork gyoza and a spicy coconut chicken curry. Splendid. 

The kids at home opted to have omelets. Lucy is reigning omelet queen these days.

They also had some kind of waffle fries. 

Look at us! One kid takes us out to eat, and one kid feeds all the rest! Amazing. It could happen to you too. 

MONDAY
Sausage, egg, and cheese bagel sandwiches; OJ

Monday I took a little drive to pick up something from Facebook marketplace for Corrie’s birthday, which is in February. Sometimes you have to snap up a good deal when it comes along, and then you drive around with a giant secret tortoise habitat in the back of your car for a few months, so what. So we had a quick meal. I didn’t burn the bagels or the eggs!

I must say, I’m looking forward to spring when the ducks start laying eggs again. They knocked off for the year several weeks ago, and we have to struggle along with these inferior chicken eggs. 

TUESDAY
Butternut squash soup with lentils and spinach; yufka; grilled cheese

Tuesday it really snowed for real. It only stuck around for a few hours, but as it fell, it whispered “soup,” so I was powerless. I was still thinking about that lovely coconut curry I had, so I found this recipe for lentil butternut squash soup with coconut and spinach.  Very promising ingredients: 

Pretty simple seasonings, just cayenne pepper and cumin along with the onion and garlic, which you cook up with some tomato paste

Add in the cubed butternut squash (from my garden!), chicken stock, and lentils, and let that cook.

I had brown lentils instead of red, but the next step was to blend it anyway, so I didn’t think it mattered much. Then you add the coconut milk and puree it all.

Another small triumph: I remembered before it was too late that hot liquid expands when you puree it, so I did it in batches in the blender

and there was no hot fountain of orange goo, not at all! Not this time. 

Hey, this is a good time to make sure you have anything you might need to order for Thanksgiving, which is less than a week away. I finally got around to ordering a new bowl for my food processor. The blender actually did really well with this particular job, though. I like the pouring spout on top.

Then you return the puree to the pot and put the spinach in and let it cook down, and that’s it. I transferred it to the Instant Pot and set it on “keep warm” and just left it for the rest of the day. The IP’s “warm” button is not as hot as a crock pot, but if you have enough time, it’s fine. 

I had been listening to Milk Street Radio and they were talking about this flaky Turkish bread, yufka, that you can make it no time – like 25 minutes, allegedly. It doesn’t have any leaven, and you just have to let the dough rest a few times before you fry it up. 

Welp, I couldn’t access the recipe they mentioned, so I found a similar one, except you don’t let it rest as much. Then you roll the pieces out and cook it them a hot pan, and that’s it.

So, I’m not sure where I went wrong with this. I made the dough in the morning and let it rest at room temperature, and then I put it in the fridge, which it said you could do. Maybe I used too much olive oil? Maybe the pan wasn’t hot enough? 

They were . . . okay. They looked okay. 

But they were so rubbery! A few parts tasted more or less like I expected, but they were so dang dense. Oh well. The soup more than made up for it. The recipe suggest squeezing some fresh lime juice over the top, and I was skeptical about that, but it was AMAZING. Just a fabulous combination of creamy and piquant flavors. I also floated a few roasted  pumpkin seeds over the top and that was a good idea as well.

Okay so the color of this soup is not necessarily the most elegant. It’s kind of orangey-yellowy-green. I think if I had used red lentils, it would have been a cheerier yellowy-orange. But the taste was superb. It was so warming and nourishing, but not heavy or muddy, like if pea soup went to finishing school, and it had a little sizzling spicy kick with the cayenne and cumin. So good. I had two bowls and had to stop myself from going back for more. 

I also made grilled cheese, because I was pretty sure the soup would not be popular, and I was right.

WEDNESDAY
Carnitas, guacamole 

Good old pork butt still goes for 99 cents a pound pretty often. I got a couple of big hunks and off we went. This is such an easy recipe with tons of flavor.

You heavily season the pork chunks and then just chuck them in the pot with oil, Coke, cinnamon sticks, bay leaves, and some orange quarters (I had clementines).

Then you just cook it down for several hours until it gets dark and yummy

You can drain off the liquid and keep cooking it at this point, or you can do what I did and just pull the meat out, shred it, and brown it up under the broiler. I added back a little of the yummy citrusy pot juice along with the meat before putting it under the heat, to keep it from drying out. 

I often make beans and rice with carnitas, but I just did guacamole this time.  Boy, is it satisfying when you choose the perfect day to slice open the avocados. I forgot to buy tomatoes, so this guac just had avocados lightly mashed, jalapenos, cilantro, onion, garlic, lime juice, and salt and pepper.

It was great! I may skip the tomato from now on. 

I put out all the regular stuff for carnitas – tortillas, sour cream, salsa, and lime wedges – but I didn’t feel like putting together the whole thing. I heated up some frozen corn and I opted for pretzels instead of chips, and I enjoyed the heck out of this slightly peculiar plate, modified for those who want to lose weight but are choosing their battles. 

And that’s my story. I am down ten pounds at last count, so there.

THURSDAY
Cranberry skillet chicken; roast potatoes, butternut squash, and Brussels sprouts

I was planning just some kind of sheet pan thing with chicken and vegetables, but I saw this recipe from a local supermarket chain, and I did have a bag of cranberries, so, again, powerless. It’s a very simple recipe. You season the chicken and brown up the skin side, then take it out of the pan

then add in some diced onion and cook that in the chickeny oil, then add in the cranberries, some brown sugar, and some oregano, and let it all bubble around a bit 

and then you put the chicken back into the cranberry mixture and put the whole thing in the oven to finish cooking. I knew I was going to be out around dinner time (another Facebook Marketplace adventure for a different birthday kid. Here’s a tip: Raise your kids to understand that used is FINE), so I cooked this in the morning and moved it into a casserole dish; but technically that is a one-pan dish and can be made in a single skillet.

Pretty! I only had one bag of cranberries, but I had a bunch of chicken, so I just browned up the rest up with oil and salt and pepper, and also put that  in a separate dish to finish cooking. 

Then I went out and harvested my poor Brussels sprouts. They struggled early on in the growing season with a brassica-specific bacteria, and they never really bounced back; but I thought I had lost them altogether, so I was pretty happy to have even these little bitty sprouts.

I popped them all off their stems and washed them well (there was one worm stowaway) and beheld my mighty harvest.

Eh, that’s what supermarkets are for. I also had another butternut squash from the garden, and a few pounds of red potatoes. I spread it all in a pan and hit them with olive oil, cider vinegar because my wine vinegar looked weird, honey, and salt and pepper. So I roasted that up before dinner while heating up the chicken 

So it was all . . . fine. Everything was a little too greasy. I think the chicken would have been quite good if I had just cooked it and served it right away. Cooking it in the morning and heating it up in the evening turned the cranberries into mush, sadly. 

Live and learn! At least I finally did something with those dumb brussels sprouts and I can stop thinking about them. Next year, I’ll remember to pull the leaves off the plants so I get more sprouts. Somebody enjoyed the leaves, though.

Oh gosh, that reminds me. Tell your kids, “SOMEBODY in this house is possessed by an owl.” Then when they say “Who?” you just stare at them. 

Anyway, I might make this cranberry dish again when I can do it properly. It was so easy, and people weren’t fully against it. 

FRIDAY
Pasta with Marcella Hazan’s magic 3-ingredient sauce

We haven’t had this savory, stupid-easy sauce for a while. Seriously, three ingredients. You will be tempted to add garlic or basil or so forth, but it really doesn’t need it. It’s simple and perfect, and truly absurdly easy.

You’re supposed to take the onions out before serving it, but we all like the onions, so we leave them in. 

And that’s my story! Try the soup! 

John Herreid's Carnitas

Very easy recipe transforms pork into something heavenly. Carnitas are basically pulled pork tacos with the meat crisped up. Serve with whatever you like.

Ingredients

  • pork butt/shoulder, cut into chunks
  • salt and pepper
  • oregano
  • oranges, quartered
  • cinnamon sticks
  • bay leaves
  • 1 can Coke or Mexican Coke
  • 1 cup or less vegetable oil

Instructions

  1. Sprinkle the chunks of pork with salt, pepper, and oregano.

  2. Put them in a heavy pot with the oil and Coke, oranges, cinnamon sticks, and bay leaves. Bring to a simmer.

  3. Simmer, uncovered, for at least two hours. The oranges will start to get mushy and the liquid will begin to thicken.

  4. When the meat is tender, remove the oranges, bay leaves, and cinnamon sticks. Turn the heat up and continue cooking, stirring often, until the meat has a dark crust. Be careful not to let it burn.

  5. Remove the meat and drain off any remaining liquid. Shred the meat. It it's not as crisp as you like, you can brown it under the oven broiler, or return it to the pot without the liquid and fry it up a bit.

  6. Serve on warm tortillas with whatever you like.

White Lady From NH's Guacamole

Ingredients

  • 4 avocados
  • 1 medium tomato, diced
  • 1 medium jalapeno, minced
  • 1/2 cup cilantro, chopped roughly
  • 1 Tbsp minced garlic
  • 2 limes juiced
  • 1 tsp chili powder
  • salt and pepper
  • 1/2 red onion, diced

Instructions

  1. Peel avocados. Mash two and dice two. 

  2. Mix together with rest of ingredients and add seasonings.

  3. Cover tightly, as it becomes discolored quickly. 

Marcella Hazan's tomato sauce

We made a quadruple recipe of this for twelve people. 

Keyword Marcella Hazan, pasta, spaghetti, tomatoes

Ingredients

  • 28 oz can crushed tomatoes or whole tomatoes, broken up
  • 1 onion peeled and cut in half
  • salt to taste
  • 5 Tbsp butter

Instructions

  1. Put all ingredients in a heavy pot.

  2. Simmer at least 90 minutes. 

  3. Take out the onions.

  4. I'm freaking serious, that's it!

What’s for supper? Vol. 231: Beef fajita bowls! Harvest chicken salad! Improved Instant Pot risotto! and endless pizza

How much pizza did we consume this week? All de pizza! Starting with Aldi pizza, ho ho ho.

SUNDAY
Pork chops, risotto

I was still feeling pretty punk on Sunday (health report: I do not have covid or pneumonia. I have Nonspecific Virus That Takes Forever to Recover From, plus massive reflux causing shortness of breath and chest pain, plus fluid in my ears), so I spent nine and a half hours trying to order food from Instacart. First they delivered it to the wrong house, but never texted me, so the food sat there for hours before I realized what had happened. Then they told me they could simply reorder the food, and I’d have it in two hours. Three hours later, they said: Oops, actually we don’t have any shoppers, but we can totally get it to you sometime tomorrow.

So I cancelled the second order, and they handsomely promised to refund my money within five days. BOO. This is my first bad Instacart experience. So I got to spend all day on Sunday shopping but not getting food, and then also go shopping on Monday. 

Luckily, we had pork chops and rice in the house (because when I say I don’t feel up to shopping, I mean I only feel up to going to two stores, not three), so I made this rather lackluster meal of broiled pork chops and Instant Pot risotto with Random Cucumbers. I think the dirty countertop really sells it. 

The yellow is duck sauce, which helped a bit. The fancy plate is because all the other plates were dirty.

The risotto actually turned out great, pretty darn close to laborious stovetop risotto. I increased the cook time by a minute, and it came wonderfully creamy. I also sautéed the rice in olive oil and then added extra butter along with the broth and wine, and that did not hurt one bit.

MONDAY
Harvest chicken salad

Monday we had a sort of Thanksgiving Lite Preview: Salad topped with pieces of roast chicken, dried cranberries, green apples, toasted pecans, blue cheese, and a balsamic fig dressing. It was so tasty and harvest-y. Bringing in the sheaves and whatnot.

Then I was struck with sudden pangs of guilt because I was serving my family “just salad” (even though you can barely see any green struggling away under the load of toppings). I happened to have a dozen graham cracker pie shells I bought on a whim a few weeks ago, and a can of pumpkin puree with a recipe on the label, and some heavy cream, so I made these cute little pies to serve along with dinner.

The kids were delighted. Yes, I will buy their love with pie.

I hereby announce, proclaim, declare, set forth, and otherwise shriek that I know “fajita” originally referred to a certain cut of steak, and then began to mean grilled strips of meat served on a tortilla. So you will see that, because there is neither skirt steak nor tortillas in this dish, it doesn’t really makes sense to call these “fajita bowls.” But I don’t know what else to call them. Texmexibowls. Spicy bois. You see my problem. So let’s just pull together in these troubled times and not be pedantic, all right? It was good food, so there.

They had these hunks of beef, maybe like a chuck roast or something, on sale. I cut them up into strips, marinated it for several hours, and then pan fried it. Here’s the marinade, with lime juice, Worcestershire sauce, olive oil, fresh garlic, cumin, salt and pepper, paprika, chili powder, and fresh cilantro:

Then I made a big pot of Instant Pot rice, and set it out with the meat and a bunch of toppings: Corn I sautéed in oil to give it a little char, fried onions, black beans with tomatoes and diced chili peppers; fresh cilantro, sour cream, limes, and corn chips. 

It was a hit! It definitely would have been nice to have some avocados or guacamole, pico de gallo, or fried peppers, but everyone liked at least some part of this meal. Some of the kids had rice and corn chips for supper, and I don’t care.

Very happy to have another option for when beef is cheap, but not so cheap we can all have steak. If there is a nicer cut of beef to be had, I may marinate it whole and then grill it, and slice it afterward; but the slice-marinate-panfry method was not a bad option. 

THURSDAY
Pizza

I did ask the kids if it was going to be okay to have pizza on the menu twice, especially since most of them get pizza for lunch on Fridays. They all said it was okay. 

They didn’t have pepperoni in either store, for some reason, so I made one cheese, two black olive, one sausage, one red onion, basil, garlic, and ricotta, and one black olive, basil, sausage, garlic, and ricotta. I top them all with oregano and garlic powder. I sometimes put parmesan on top of that, but I forgot. 

I am liking the results of using no more than about a tablespoon of ricotta in dollops all over the pizza, with red pepper flakes baked in. 

So nice. 

FRIDAY
Ginger scallion noodles

I don’t even have a recipe for this yet, but I plucked the idea off the internet airwaves, so I’m sure I’ll find something good. I definitely have some linguine and fresh ginger in the house, and so many little cups of sprouting scallions on the windowsills, so that sounds like a recipe, right? 

And the kids are eating pizza for lunch as we speak. It’s okay with me. 

Instant Pot Risotto

Almost as good as stovetop risotto, and ten billion times easier. Makes about eight cups. 

Ingredients

  • 1 medium onion, diced
  • 4 cloves garlic, minced or crushed
  • 1 tsp salt
  • 1 tsp ground sage
  • 3 Tbsp olive oil
  • 4 cups rice, raw
  • 6 cups chicken stock
  • 2 cups dry white wine
  • 1/2 cup butter
  • pepper
  • 1.5 cups grated parmesan cheese

Instructions

  1. Turn IP on sautee, add oil, and sautee the onion, garlic, salt, and sage until onions are soft.

  2. Add rice and butter and cook for five minutes or more, stirring constantly, until rice is mostly opaque and butter is melted.

  3. Press "cancel," add the broth and wine, and stir.

  4. Close the top, close valve, set to high pressure for 9 minutes.

  5. Release the pressure and carefully stir in the parmesan cheese and pepper. Add salt if necessary. 

 

Beef marinade for fajita bowls

enough for 6-7 lbs of beef

Ingredients

  • 1 cup lime juice
  • 1/3 cup Worcestershire sauce
  • 1/2 cup olive oil
  • 1 head garlic, crushed
  • 2 Tbsp cumin
  • 2 Tbsp chili powder
  • 1 Tbsp paprika
  • 2 tsp hot pepper flakes
  • 1 Tbsp salt
  • 2 tsp pepper
  • 1 bunch cilantro, chopped

Instructions

  1. Mix all ingredients together.

  2. Pour over beef, sliced or unsliced, and marinate several hours. If the meat is sliced, pan fry. If not, cook in a 350 oven, uncovered, for about 40 minutes. I cook the meat in all the marinade and then use the excess as gravy.
