What’s for supper? Vol. 278: (val)Challah Rising

Happy mid-January! I don’t know about you, but I finally worked up the nerve to get up on the scale, and I have gained ten pounds over Christmas! Ten pounds, hooray! Wait, I mean, ten pounds, booooo.  And I’m very annoyed at myself. But I know how to lose it, so, away we go. 

Here’s what we had this week:

SATURDAY
Damien’s birthday!

The kids had, I think, chicken nuggets. The adults went to The Winchester, and it was good. 

SUNDAY
Linguine and ragù, bread

Damien made a beautiful savory pork and veal ragù using this Deadspin recipe

It’s always tasty, but this one was especially good. This recipe has hardly any tomato in it. Not that there’s anything wrong with tomato; it’s just very different from a typical red sauce with meat thrown in. Very different indeed.

MONDAY
Meatball subs, veggies and dip

My meatballs are like me, large, uninspired, and soft in the middle. I did throw a bunch of Worcestershire sauce in there to jazz them up, which resulted in them being salty. Hey, it’s hot meatballs in January. Nobody complained.

TUESDAY
Beef barley soup, challah

It was fuh-reezing out — actually far below freezing — and just raw and bleak and rotten, so a good day for a hearty soup and some bumptious, golden bread. 

This soup starts with carrots, onions, and garlic, and then beef, then tomatoes, then beef broth and wine and plenty of pepper, and then barley.

I actually had a pouch of barley and lentils, and nobody noticed the lentils. I also added an extra cup of wine, which was not a bad idea. I forgot to take a photo, so here is some soup of ages past:

The day was frigid but sunny, so I put the challahs out for their second rise in a sunbeam on the table, where they all but rang a bell and demanded another strawberry daiquiri from the pool boy. 

They came out of the oven looking like respectable matrons, though

and everyone was pretty happy, and nobody pointed out that part of the middle was extremely damp and heavy and totally could have used another 6-7 minutes in the oven.

Next time I’ll bake it longer. I’m actually thinking of trying some different recipes, though. Here’s mine:

The flavor is exactly what I want, and the texture of the bread inside is perfect (when it’s well-baked), but I would like the crust to be a little more crisp. Any recommendations? Or would it help to knead it longer or something?

WEDNESDAY
Pork bulgoki with nori and rice, sesame broccoli

It’s been a while! This is a cheap, easy Korean dish with lots of flavor and lots of heat. Literally “fire meat,” made with that wonderful gochujang, plus honey, sugar, garlic, and soy sauce, and whatever pork is on sale (you can use it on beef, too). I sometimes marinate ribs or chops and grill them whole, but today, I cut . . . some kind of giant pork hunk, I wasn’t paying attention . . . into thin strips.

I threw a bunch of onions and baby carrots in the food processor, rather than doing matchstick carrots like I usually do, and I liked it this way, with the carrots cut thin. Marinated several hours before stir frying on the stove in a little oil.

I also . . . and I still can’t even believe this  . . . did not crowd the pan when I cooked the meat. I used two big skillets and I cooked the food in batches, transferring it to a dish in the oven as it finished, so it had a chance to brown up a bit, and it didn’t end up coddling itself to death in its own moisture. 

I made a big pot of rice in the Instant Pot and roasted a tray of sesame broccoli, and served the meat with sheets of seaweed. You pull off a square of seaweed and use it to grab up a little meat and a little rice, and you pop the bundle in your mouth.

So tasty and lovely. You can also use lettuce instead of seaweed. If you made the gochujang sauce spicy, it’s definitely good to have something green to cool your tongue a bit. 

I also made a tray of sesame broccoli, easy peasy.

Few things give me more satisfaction than making three different dishes that are all hot and ready at exactly the same time. 

THURSDAY
Pizza

One cheese, one pepperoni, one olive, and one with feta, ricotta, fresh-shredded parmesan, olives, red pepper flakes, garlic powder and oregano, artichoke hearts, red onion, fresh garlic, and anchovies. The cat was watching closely and I realized I was blocking his food dish. Poor little kitty cat! So I moved the pizza aside. He promptly jumped up on the counter and ate an anchovy right off the pizza! I don’t know why this surprised me so much. I guess I spend a lot of time with the dog, who would have done exactly the same thing, except he would have been furtive about it. The cat is too dumb to be furtive

I also got the idea to brush the crusts with olive oil and sprinkle them with garlic salt. I got this idea from Domino’s. Domino’s has been on my mind lately because the only local one burned down last week (actually the bar next to it burned down, and the whole building is a total loss). Some people heard fire engine sirens, but others heard it for what it truly was: A shrieking judgment directly from heaven, calling down doom on the heads of disorganized moms who have been getting through the day by telling themselves that if it all goes to hell by 6 PM, we can just order Domino’s. 

Anyway, here is the pizza. It was delicious. Yes, I cut it like a sociopath.

The oil and garlic salt really didn’t make a difference on the crusts, though, to my disappointment. This may have been because I did it in the morning and the pizza had several hours to sit before it baked, so the dough had risen more than usual before baking, and maybe the effect was kind of dispersed. Next time, I’ll do it right before I put it in the oven. 

FRIDAY
Tuna noodle

The kids requested this when I was feeling weak, so I agreed. I actually kind of like this meal. I guess it’s mostly the draining of the tuna I resent. When I worked at Subway, we would drain vast quantities of canned tuna by squeezing it by hand in a giant colander. That was one of the best jobs I ever had. But I guess it was only fun to hand-squeeze tuna if I was getting paid. [makes note under “ideas for only fans”]

Well, here are the recipe cards for the week! I’m starting my second full day of not eating things just because they are sitting on the table and nobody else is eating them. Who’s with me?

 

Meatballs for a crowd

Make about 100 golf ball-sized meatballs. 

Ingredients

  • 5 lbs ground meat (I like to use mostly beef with some ground chicken or turkey or pork)
  • 6 eggs, beaten
  • 2 cups panko bread crumbs
  • 8 oz grated parmesan cheese (about 2 cups)
  • salt, pepper, garlic powder, oregano, basil, etc.

Instructions

  1. Preheat oven to 400.

  2. Mix all ingredients together with your hands until it's fully blended.

  3. Form meatballs and put them in a single layer on a pan with drainage. Cook, uncovered, for 30 minutes or more until they're cooked all the way through.

  4. Add meatballs to sauce and keep warm until you're ready to serve. 

 

Beef barley soup (Instant Pot or stovetop)

Makes about a gallon of lovely soup

Ingredients

  • olive oil
  • 1 medium onion or red onion, diced
  • 1 Tbsp minced garlic
  • 3-4 medium carrots, peeled and diced
  • 2-3 lbs beef, cubed
  • 16 oz mushrooms, trimmed and sliced
  • 6 cups beef bouillon
  • 1 cup merlot or other red wine
  • 29 oz canned diced tomatoes (fire roasted is nice) with juice
  • 1 cup uncooked barley
  • salt and pepper

Instructions

  1. Heat the oil in a heavy pot. If using Instant Pot, choose "saute." Add the minced garlic, diced onion, and diced carrot. Cook, stirring frequently, until the onions and carrots are softened. 


  2. Add the cubes of beef and cook until slightly browned.

  3. Add the canned tomatoes with their juice, the beef broth, and the merlot, plus 3 cups of water. Stir and add the mushrooms and barley. 

  4. If cooking on stovetop, cover loosely and let simmer for several hours. If using Instant Pot, close top, close valve, and set to high pressure for 30 minutes. 

  5. Before serving, add pepper to taste. Salt if necessary. 

 

Challah (braided bread)

Ingredients

  • 1.5 cups warm water
  • 1/2 cup oil (preferably olive oil)
  • 2 eggs
  • 6-8 cups flour
  • 1/4 cup sugar
  • 2 tsp salt
  • 1.5 tsp yeast
  • 2 egg yolks for egg wash
  • poppy seeds or "everything bagel" topping (optional)
  • corn meal (or flour) for pan, to keep loaf from sticking

Instructions

  1. In a small bowl, dissolve a bit of the sugar into the water, and sprinkle the yeast over it. Stir gently, and let sit for five minutes or more, until it foams.

  2. In the bowl of standing mixer, put the flour (starting with six cups), salt, remaining sugar, oil, and eggs, mix slightly, then add the yeast liquid. Mix with dough hook until the dough doesn't stick to the sides of the bowl, adding flour as needed. It's good if it has a slightly scaly appearance on the outside.

  3. (If you're kneading by hand, knead until it feels soft and giving. It will take quite a lot of kneading!)

  4. Put the dough in a greased bowl and lightly cover with a damp cloth or plastic wrap. Let it rise in a warm place for at least an hour, until it's double in size.

  5. Grease a large baking sheet and sprinkle it with flour or corn meal. Divide the dough into four equal pieces. Roll three into "snakes" and make a large braid, pinching the ends to keep them together. Divide the fourth piece into three and make a smaller braid, and lay this over the larger braid. Lay the braided loaf on the pan.

  6. Cover again and let rise again for at least an hour. Preheat the oven to 350.

  7. Before baking, make an egg wash out of egg yolks and a little water. Brush the egg wash all over the loaf, and sprinkle with poppy seeds or "everything" topping.

  8. Bake 25 minutes or more until the loaf is a deep golden color.

Gochujang bulgoki (spicy Korean pork)


Ingredients

  • 1.5 pound boneless pork, sliced thin
  • 4 carrots in matchsticks or shreds
  • 1 onion sliced thin

sauce:

  • 5 generous Tbsp gochujang (fermented pepper paste)
  • 2 Tbsp honey
  • 2 tsp sugar
  • 2 Tbsp soy sauce
  • 5 cloves minced garlic

Serve with white rice and nori (seaweed sheets) or lettuce leaves to wrap

Instructions

  1. Combine pork, onions, and carrots.

    Mix together all sauce ingredients and stir into pork and vegetables. 

    Cover and let marinate for several hours or overnight.

    Heat a pan with a little oil and sauté the pork mixture until pork is cooked through.

    Serve with rice and lettuce or nori. Eat by taking pieces of lettuce or nori, putting a scoop of meat and rice in, and making little bundles to eat. 

 

Sesame broccoli

Ingredients

  • broccoli spears
  • sesame seeds
  • sesame oil
  • soy sauce

Instructions

  1. Preheat broiler to high.

    Toss broccoli spears with sesame oil. 

    Spread in shallow pan. Drizzle with soy sauce and sprinkle with sesame seeds

    Broil for six minutes or longer, until broccoli is slightly charred. 

What’s for supper? Vol. 269: In which I push my luck

Happy Fribeday! Today’s edition includes several delightful foods I certainly did not cook myself, plus some rolls which no one but me could or would have made. And I am wined and dined and manage to complain about it. 

So, Saturday and Sunday and part of Monday, Damien and I were away at a little getaway for an early anniversary trip. 24 years, just about! We somewhat randomly decided to go to Canobie Lake Park Screeemfest, which means their normal amusement park with miscellaneous spooky decorations, plus some haunted houses and shows.

American Halloween is weird, man. It’s such a mishmash of different aesthetics. We both discovered that we don’t like haunted houses at all anymore. I honestly think I would have just gotten completely overwhelmed and not been able to find my way out, so Damien basically grabbed me and pulled me through as fast as possible, and then we sat on a bench for a while until I could stop saying, “My goodness.”  We did go on a bunch of normal rides, including bumper cars, my favorite ecstatic swings-on-chains one, and one that is the same as a washing machine spin cycle, except that, instead of the dirty water going out, it is your blood trying to escape. 

The first thing we did was eat, though, which may have been a tactical error, but I was starving! We both had a smoked brisket sandwich with jalapeños, coleslaw, and beer. Holy cow, it was delicious.

Can’t remember the name of the vendor, but they were set up near the flying rooster ride. I really must learn how to smoke brisket. We used to occasionally have brisket when I was growing up, but Jewish brisket is not the same as smoked brisket on a sandwich. I have no desire to recreate the occasional brisket of my childhood. 

We stayed at the park for a few hours until we began to feel too old, and then made our way to the hotel. We had requested a second night, but hadn’t heard back, so Damien called the front desk, who rather rudely told him to talk to Priceline, who had him wait for a long time before letting him know that they didn’t really know what was going on and he should talk to the hotel, who then informed him that the hotel was all booked up. I was a tiny bit relieved, and it smelled somewhat like wee in there, and I also had it in my head that there might be bedbugs (there weren’t). Damien then booked a room at a much nicer hotel at Hampton Beach for the second night with no problem. This becomes important later. I was a little nervy, with the imaginary bedbugs, and my blood trying to escape, and only slept a few hours, but we were still having fun! I brought orange juice. 

SUNDAY

We got up, went to Mass — well, went to what turned out to be the wrong church, and then launched ourselves to the right church only a few minutes late for Mass — and then proceeded to Newburyport, MA. We didn’t really have a plan, but it looked like a pretty town, so we stopped for lunch.

I quickly realized that it was an aggressively nice town. Half the roads were cobblestone, either original or put in just to be cute, it was hard to say. Absolutely adorable architecture, gift shops selling silver and crystals and mermaid everything everywhere, touristy to the max. A trans woman with long white hair and a long white dress playing a harp in the town commons, and every single damn dog I saw was in a stroller. I quietly renamed it Painintheass, MA in my head. Honestly, a really nice town, but just Too Too Much.  However, after I browsed around the shops and Damien got some work done at a café, we got a table at a lovely restaurant by the riverwalk, and had a magnificent brunch at Sea Level Oyster Bar

We had an order of fried calamari that included batter fried hot peppers, very nice

but the real star was the oysters. I have never had such wonderfully fresh, luscious, tasty oysters. There were three different kinds

and one of the accompaniments was a tart pineapple mignonette. Wowzers. 

I ordered something called Sluice Juice IPA from Bent Water beer. Terrible name, but a really wonderful beer, very citrusy and refreshing, with lots of different flavors. I don’t really like beer unless I’m eating, and this was the absolute perfect beer to go with seafood. 

 

The only non-chocolate dessert was apple pie in a jar, so I ordered that. It came with what must have been a sugared mermaid or fishtail crust garnish, but it looked more like antlers and didn’t taste like much. The rest was lovely, though, tart and fresh with plenty of whipped cream and a kind of streusel on the bottom. 

We had a seat near the water (I think it’s the Merrimack River), the service was fast and friendly, and I would absolutely go back to that very pleasant restaurant.

We spent a little time browsing the antique market (which requires vaccines and masks), and stopped at a Greek gift store, where I had spotted a blue icon sun catcher I wanted, and then got bullied into buying a quite expensive bottle of olive oil from Sparta. Yia Yia was very persuasive. She kept shouting at us, and there was something about her three grandchildren in heaven that she cooks for every night using that same oil. I swear I only had one beer, and that’s what she said. I narrowly avoided buying an entire can of the oil, which was $50. She also threw in some oregano. 

We eventually got back on the road and found ourselves in Seabrook, which has a nuclear power plant, but it turns out you can only see it in the summer. And then we got to Hampton Beach. 

Here’s the short version of what happened next: We had allegedly checked in online, and should have been able to go straight to our room, but it didn’t work. When we tried to check in at the desk, the clerk seemed a little flustered, and asked if my name was [something other than Simcha]. Then she said that there was another family also called Fisher, and that was unusual.

Ok? I didn’t think much of it until we got up to our room and unlocked the door, and … There were already some people in that room! Goodness gracious. So embarrassing. 

At first we apologized, but then we realized our key had opened the door. So I said, “Wait a minute, is your last name Fisher?” And it was.

It turns out the other Fisher family’s credit card had been declined, but the clerk thought we were all together, so they went ahead and put them in the room and charged our card! And then when we checked in, they charged our card again! So we got charged twice, but did not get a room! So I sat down in the hall with our luggage, and Damien went to the desk to straighten things out. And see if they actually had a room for us!

Which they did, eventually. With an upgrade, as is meet and just. We had a great ocean view and a big ol’ bed and a big ol’ balcony, and I opened the door to the ocean and cranked up the heat and we just put our feet up for a while, whuffing the breeze and not doing anything for a while, because it was already evening by this point.  It was at this point that I began to think we had packed in too much walking for someone with arthritis in her hip, and too much driving for people who are supposed to be relaxing, and possibly not accounted for this much ridiculousness for a very short weekend, but what can you do.

We eventually made our way to the hotel restaurant, where I ordered maple bacon scallops and a white Russian

which tasted exactly like it sounds, hot and tasty if not terribly sophisticated. Then I ordered a Reuben and another white Russian, and we just kept reminding each other that there is an employment crisis and the waitress is obviously trying her best, because it took about five hours to get that damn sandwich. 

At this point, I was fairly white Russian, and wasn’t able to make much headway in the sandwich. I will say that that was the most goyishe pickle I’ve ever had in my life. It was just a piece of cucumber having a hard time, that’s all. (Yes, we tipped well. Everybody’s having a hard time.) 

So up to the room and I stashed my leftover Reuben in the mini fridge. All night long, the fridge was making these peculiar clattering, howling sounds, and I kept thinking, “This is the second night in a row that I’m not sleeping at all! I should get up an unplug the fridge! But no, my Reuben is in there!” Finally, around 5 a.m., I drifted off to sleep. At 7 a.m., the neighbors STARTED UP A KARAOKE PARTY. Sweet Caroline, You’ve Lost That Lovin’ Feeling, the whole nine yards. Who does that?? Damien called the front desk to complain. This being the same crew that so adroitly arranged the whole Schrödinger’s Fishers rooming situation, they honestly did not do a great job making the neighbors be quiet; but eventually they sang themselves out, and we dozed off again, and then it was time to check out. We somewhat blearily packed up our stuff and put it all in the car, and then we had a few hours to enjoy the beach; only, to be honest we were both freaking exhausted, and it was cold. So we spent a little time breathing in the salt air and watching the seagulls swoop around, then picked out some candy for the kids, and then we were all done. And I forgot my Reuben.

It was a very pretty ride home, though, really the very peak of foliage glory. A few times, we would come around a bend and get smacked in the face with so much color, we both just started laughing. I do love that man. We have the weirdest anniversaries, though. 

MONDAY
Chili

We used to do a big Italian feast for Columbus Day, but we’ve moved that to St. Joseph’s day, because, c’mon. We didn’t have a lot of time to put together anything indigenous, but Damien made a highly delicious chili.

Do you know, it’s not easy to take a photo of chili that shows it looking delicious, but I tried.

I might have knocked down the salt content a bit, but it was nicely spicy and the balance of meat to bean and corn was great. I had mine with sour cream, cheese, and chives.

Did eat leftovers for lunch.

TUESDAY
Chicken caprese sandwiches

On the theory that we may be dead tomorrow anyway, I went ahead and set out the good Greek olive oil and weakly warned the children that it was Very Expensive Indeed, and then just walked away. 

As you can see, I sloshed on as much as I liked. Maybe we’ll be dead tomorrow. It was really good. Tasted like olives. 

WEDNESDAY
Meatball subs on homemade french bread

On Wednesday, Dora borrowed my car and did my afternoon school pick-up, meaning I had the afternoon free to fritter away in whatever manner I pleased. So I made a bunch of meatballs in the morning.

I made them with about four pounds of ground beef and two pounds of ground turkey, which happened to be on sale. This lightens meatballs up quite a bit, and I prefer them this way. I cook my meatballs on a broiler pan in a 450 oven, and then transfer them to a pot with sauce. This is ten thousand times easier, neater, and faster than pan-frying them, and they’re not quite as scrumptious, but they are meatballs, absolute balls of meat, and nobody every complains.

The roll, though.

Aldi was completely out of rolls when I went shopping. Aldi is like that. They have such great prices and some really wonderful products and treats, but then they’ll be like, “Oh sorry, we’re not doing the whole bread thing today” or they’ll act like they never heard of potatoes. You have to assume, when you go to Aldi, that you’ll also be going somewhere else afterward.

OR, you could think, “Wait, I don’t have to go anywhere this afternoon! I could MAKE MY OWN ROLLS!” Forgetting for the moment that you’re kind of a cruddy baker and your bread turns out well maybe one in five times.

Well, I did remember a good tip, which is that you can proof your dough in the Instant Pot. Grease the pot, plonk your dough in there, cover it with plastic wrap or a damp towel, and press the “yogurt” button. If you need more of a cover, use a plate or a pot lid, not the regular Instant Pot cover, because, as a few friends warned me, you’ll have a horrible time picking the dough out of the sealing ring and the valve and such if it rises too much. 

My dough rose pretty well the first time, but then I decided to start a huge bulb planting project, and I think here is where my bread went wrong, because I had to keep setting timers and dashing in and out of the house, and not always hearing the timer because I was planting bulbs next to the highway and it was pretty loud, what with trucks rushing past and people honking at me. I had a giant tub of cayenne pepper I was spreading around to keep the squirrels from digging up my bulbs, and the wind was blowing, and the cars were honking, and my alarm kept going off, and I kept running in and out, I don’t know. It always goes wrong somehow. Also I was kind of low on flour, so I had to throw some cornmeal in there. Anyway, I decided to make a bunch of short, skinny rolls, and some of them looked so flabby, I tried to scrunch them up a bit before putting them in to bake, and THAT  . . .

A lot of them actually turned out looking like normal rolls, but I didn’t take pictures of those, because this isn’t actually a cooking post, sorry. 

They tasted okay. Slightly mealy, no doubt because of the cornmeal. 

THURSDAY
Yakitori chicken, rice

Damien made this fabulous Japanese chicken on the grill. He made a triple recipe of this sauce, and you’re supposed to use it on boneless, skinless chicken on skewers, but I got offended at the boneless, skinless chicken price, so I came home with about 20 intact chicken thighs, and he opted to cook it that way. Great choice. I don’t know if “yakitori” means that it’s on skewers, or if it refers to the sauce. I just don’t know. But look at this chicken!

This is how he prepared it: He whisked together the sauce ingredients and boiled and stirred for 5 minute until it thickened up. He set aside half the sauce and then smoked the chicken for about an hour, coating it on both sides with the sauce a few times. Then he grilled the chicken and coated it over indirect flames, and coated and smoked a little more to make sure everything was cooked all the way.

He served the chicken with the rest of the sauce, plus sesame seeds and chopped scallions. I made a big pot of rice cooked in chicken broth, which the kids consider a delicacy.  

Deee-licious. The sauce is sharp and dark savory and tasted wonderful with the charred chicken skin. I really hope we have this again. 

FRIDAY
Mac and cheese for the kids, possibly fried calamari 

On the way home from our wanderings on Monday, we stopped to pick up the chili ingredients, and I happened to see a bunch of frozen calamari rings, which I couldn’t turn down because they don’t sell it at my normal supermarkets. How much should I push my luck? How hard could it be? Actually I think Damien is going to make fried calamari. I don’t even know what I’m for around here, anymore. I guess I do yoga and eat, and sometimes I plant flowers for the spring, just in case.

French bread

Makes four long loaves. You can make the dough in one batch in a standard-sized standing mixer bowl if you are careful!

I have a hard time getting the water temperature right for yeast. One thing to know is if your water is too cool, the yeast will proof eventually; it will just take longer. So if you're nervous, err on the side of coolness.

Ingredients

  • 4-1/2 cups warm water
  • 1/4 cup sugar
  • 2 Tbsp active dry yeast
  • 5 tsp salt
  • 1/4 cup olive or canola oil
  • 10-12 cups flour
  • butter for greasing the pan (can also use parchment paper) and for running over the hot bread (optional)
  • corn meal for sprinkling on pan (optional)

Instructions

  1. In the bowl of a standing mixer, put the warm water, and mix in the sugar and yeast until dissolved. Let stand at least five minutes until it foams a bit. If the water is too cool, it's okay; it will just take longer.

  2. Fit on the dough hook and add the salt, oil, and six of the cups of flour. Add the flour gradually, so it doesn't spurt all over the place. Mix and low and then medium speed. Gradually add more flour, one cup at a time, until the dough is smooth and comes away from the side of the bowl as you mix. It should be tender but not sticky.

  3. Lightly grease a bowl and put the dough ball in it. Cover with a damp towel or lightly cover with plastic wrap and set in a warm place to rise for about an hour, until it's about double in size.

  4. Flour a working surface. Divide the dough into four balls. Taking one at a time, roll, pat, and/or stretch it out until it's a rough rectangle about 9x13" (a little bigger than a piece of looseleaf paper).

  5. Roll the long side of the dough up into a long cylinder and pinch the seam shut, and pinch the ends, so it stays rolled up. It doesn't have to be super tight, but you don't want a ton of air trapped in it.

  6. Butter some large pans. Sprinkle them with cornmeal if you like. You can also line them with parchment paper. Lay the loaves on the pans.

  7. Cover them with damp cloths or plastic wrap again and set to rise in a warm place again, until they come close to double in size. Preheat the oven to 375.

  8. Give each loaf several deep, diagonal slashes with a sharp knife. This will allow the loaves to rise without exploding. Put the pans in the oven and throw some ice cubes in the bottom of the oven, or spray some water in with a mister, and close the oven quickly, to give the bread a nice crust.

  9. Bake 25 minutes or more until the crust is golden. One pan may need to bake a few minutes longer.

  10. Run some butter over the crust of the hot bread if you like, to make it shiny and even yummier.

Damien's Indigenous Chili

Ingredients

  • 3 lbs ground beef
  • 2 onions, chopped
  • 1 head garlic, chopped
  • 1 shallot, chopped
  • 2 jalapeños, chopped
  • 28 oz crushed tomatoes
  • 16 oz canned kidney beans, drained
  • 16 oz canned corn, drained
  • 16 oz beer
  • 16 oz chicken broth
  • 1 tsp sugar
  • 2+ Tbsp cumin
  • 2+ Tbsp chili powder
  • 1/4 cup white vinegar
  • salt and pepper to taste
  • 1/2 bottle (?) Frank's Hot Sauce
  • olive oil for frying

sour cream, chopped chives, shredded cheese for serving

Instructions

  1. Cook up the onions garlic and peppers in a little olive oil until soft.

  2. Add meat, brown, and add salt and pepper.

  3. Add the rest of the ingredients, stir and then cover loosely and simmer a couple of hours.

  4. Serve with sour cream, chopped chives, and shredded cheese.

Sandwiches and fries

Damien brought home some baguettes and and assortment of deli meats and cheese and some jarred peppers and things. Very tasty. Forgot to take a picture.

SUNDAY

Nobody can remember what we had on Sunday. It has been erased from the books, wiped clean from the slate, carved clear of the tablets of history. Probably burgers.

Oh, now I remember: Sunday I was picking up Lena from Granite State Comiccon. She did really well, selling prints, stickers, and masks. I happen to have one of her stickers on my laptop

and these apparently sold very briskly. I’ll let you know when she gets her Etsy store restocked. 

MONDAY
Beef barley soup, pumpkin muffins

Corrie has been begging for beef barley soup and Benny has been begging for pumpkin muffins, so even though it was in the mid 70’s, I caved. The leaves are changing, the ducks are flying south, there’s a fog rolling across the dried grass in the mornings, and people who live within a mile of actual corn fields are paying $7.88 for disinfected stalks of corn from Walmart to attach to their porches with zip ties. Sounds like soup weather to me. 

The beef barley soup turned out very nice, although I forgot to buy mushrooms. I made it on the stovetop, but here is a recipe you can easily make in the Instant Pot if you’d prefer

I also made about 18 pumpkin muffins, and they turned out a little weird. The can of pumpkin I was counting on turned out to be pumpkin pie mix, which already has spices and sugar added to it, plus who knows what else.

Then I didn’t help matters by somehow bobbling the hot pan and dumping every single muffin out onto the oven floor, which is currently foul and horrible. So a bunch of them got charred and a bunch of them picked up miscellaneous oven crap, and they weren’t sweet enough, and they had a weird texture, more like cake than muffins, but somehow not in a good way. 

Corrie has been putting them in her lunch every day, though, so it wasn’t a total loss. Her lunch gets inspected because there is a kid with a nut allergy this year, so either the teacher is impressed that I bake a lot, or the teacher is horrified that I’m sending my kid to school with charred pumpkin lumps, not sure which. 

TUESDAY
Chicken burgers, chips, veggies and dip

A very deluxe meal, as you can see.

I’ve been putting bowls of fruit on the table, to dissuade myself from eating chips. It works, in the sense that I eat fruit with my meal, and then go back after supper and eat everybody’s leftover chips. 

WEDNESDAY
Chicken soup with matzoh balls, challah, Earl Grey cake with vanilla bean frosting

Clara’s birthday! She requested this coziest of meals. I more or less followed my mother’s recipe for chicken soup, and the recipe on the can for matzoh balls. I made the soup the day before, so it could cook all day long and get very rich and golden. Forgot to take a pic of the finished soup, but here it is being made. I used just some legs, plus carrots, celery, onions, dill, and parsley, and lots and lots of simmering time:

I made two big challahs and they turned out pretty nice. It was chumid as chell, which maybe made the loaves a little flabbier than strictly necessary, but they were pretty good. 

The Early Gray tea cake from Liv For Cake was quite a project. I am not much of a baker, and have long since resigned myself to making box cakes for most birthdays. I followed this recipe slavishly, though, and it came out well. Maybe a little dry; I guess I baked it a hair too long. And my oven really needs leveling!

You have to make tea milk and add that to the batter, as well as adding ground tea. You can also make tea syrup to brush over the baked cake, which I ended up not having time for. Very pleasant, cozy, old fashioned flavor, almost citrusy, not too sweet, and the cake has a very fine grain. 

The vanilla bean frosting that goes with it was also a little more labor intensive than I normally attempt, and I will be honest, it didn’t taste that spectacular to me. You cream egg whites and sugar, then whisk them over a double boiler, then put them back in the stand mixer and keep whisking until they are stiff, then add in the butter and vanilla bean paste. The texture is extremely light and has a creamy flavor — like it tastes like there is cream in it — but it also tasted like shortening to me, which was pretty disappointing, since the actual ingredients (unsalted butter, vanilla bean paste) were actually pretty expensive. Maybe I just don’t like buttercream that much. Everyone else liked it, and it was very easy to work with. 

For some reason I got the idea to make a Great Wave off Kanagawa cake.

I guess the sort of frothy buttercream looked wavy. If I had planned ahead, I would have bought some nonpareils for the foam, but I just piped it in with a sandwich bag and a butter knife. I forgot to put the boat in. Anyway, Clara liked it. 

THURSDAY
Pizza

Damien made pizzas. He tried toasting the pepperoni before adding it to the pizza, just to give it a little extra crunch. I didn’t try any, but he said it was good, not spectacular. He also made one cheese, one pepperoni, and one with anchovies, artichoke hearts, and garlic. Guess which one I held out for.

FRIDAY
Penne

The kids requested pasta that is shaped like tubes, in sauce that comes in jars. That I can do.

And now I’m excited, because my Foley mill arrived in the mail!

This is a lovely little machine, very well designed. It clips onto the side of a pot or bowl, and when you turn the crank, the high end of the inside blade catches food underneath it and forces it down through the little holes as it turns, so it crushes it and also sorts out the seeds and skins and whatnot; and at the same time, a little pin turns on the bottom

to keep it clear as you work. Very nice. 

I bought it from eBay, to replace the food mill I threw out at some point last year. I guess I was doing some kind of kitchen purge and thought, “What is this dumb thing taking up space? I can’t use it more than once a year!” Well guess what, stupid? Here we are at the one time of year when I want to make applesauce, and a food mill is really the only thing that works. I like to cook the apples with the skin and cores in, and then strain them out afterward. You can do it with a sieve, but it’s horrible work and takes forever, and a food mill is just fun to use. Our terrible little apple tree also has plenty of terrible apples on it this year. They’re not really good for anything else besides apple sauce, but they have an intriguing smoky flavor that makes very pleasant sauce. The tree’s name is Marvin.

If you’ve never made your own apple sauce, it’s super easy, and a good way to use the million apples your toddler took one bite of and then discarded. Cut them into quarters, leaving on the skins and cores, and put them in a big pot with an inch or two of water on the bottom. Cover loosely and let it simmer for . . . okay, I don’t remember how long. Maybe forty minutes? Long enough that, when you poke the apples, they don’t resist at all, but collapse into mush. (Softer apples, like Macintosh, are best for applesauce, obviously.) Then you dump everything into a food mill (or sieve) and crush out all the skins and cores.

Add however much sugar and cinnamon you like, and a little butter, and stir. That’s it. Best applesauce you’ve ever had, and the smell is heavenly.  Warm, rosy homemade applesauce with a little vanilla ice cream on top will bring tears to your eyes.

You can also trim the cores and peels off first, and then you can just use a blender or whatever to make the apples into sauce, but the flavor and color won’t be nearly as nice. 

And that’s it! Headed out to adoration in a bit. Praying for you all, cheese bags. 

 

Beef barley soup (Instant Pot or stovetop)

Makes about a gallon of lovely soup

Ingredients

  • olive oil
  • 1 medium onion or red onion, diced
  • 1 Tbsp minced garlic
  • 3-4 medium carrots, peeled and diced
  • 2-3 lbs beef, cubed
  • 16 oz mushrooms, trimmed and sliced
  • 6 cups beef bouillon
  • 1 cup merlot or other red wine
  • 29 oz canned diced tomatoes (fire roasted is nice) with juice
  • 1 cup uncooked barley
  • salt and pepper

Instructions

  1. Heat the oil in a heavy pot. If using Instant Pot, choose "saute." Add the minced garlic, diced onion, and diced carrot. Cook, stirring frequently, until the onions and carrots are softened. 


  2. Add the cubes of beef and cook until slightly browned.

  3. Add the canned tomatoes with their juice, the beef broth, and the merlot, plus 3 cups of water. Stir and add the mushrooms and barley. 

  4. If cooking on stovetop, cover loosely and let simmer for several hours. If using Instant Pot, close top, close valve, and set to high pressure for 30 minutes. 

  5. Before serving, add pepper to taste. Salt if necessary. 

 

Pumpkin quick bread or muffins

Makes 2 loaves or 18+ muffins

Ingredients

  • 30 oz canned pumpkin puree
  • 4 eggs
  • 1 cup veg or canola oil
  • 1.5 cups sugar
  • 3.5 cups flour
  • 2 tsp baking soda
  • 1.5 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger
  • oats, wheat germ, turbinado sugar, chopped dates, almonds, raisins, etc. optional

Instructions

  1. Preheat oven to 350. Butter two loaf pans or butter or line 18 muffin tins.

  2. In a large bowl, mix together dry ingredients except for sugar.

  3. In a separate bowl, mix together wet ingredients and sugar. Stir wet mixture into dry mixture and mix just to blend. 

  4. Optional: add toppings or stir-ins of your choice. 

  5. Spoon batter into pans or tins. Bake about 25 minutes for muffins, about 40 minutes for loaves. 

 

Challah (braided bread)

Ingredients

  • 1.5 cups warm water
  • 1/2 cup oil (preferably olive oil)
  • 2 eggs
  • 6-8 cups flour
  • 1/4 cup sugar
  • 2 tsp salt
  • 1.5 tsp yeast
  • 2 egg yolks for egg wash
  • poppy seeds or "everything bagel" topping (optional)
  • corn meal (or flour) for pan, to keep loaf from sticking

Instructions

  1. In a small bowl, dissolve a bit of the sugar into the water, and sprinkle the yeast over it. Stir gently, and let sit for five minutes or more, until it foams.

  2. In the bowl of standing mixer, put the flour (starting with six cups), salt, remaining sugar, oil, and eggs, mix slightly, then add the yeast liquid. Mix with dough hook until the dough doesn't stick to the sides of the bowl, adding flour as needed. It's good if it has a slightly scaly appearance on the outside.

  3. (If you're kneading by hand, knead until it feels soft and giving. It will take quite a lot of kneading!)

  4. Put the dough in a greased bowl and lightly cover with a damp cloth or plastic wrap. Let it rise in a warm place for at least an hour, until it's double in size.

  5. Grease a large baking sheet and sprinkle it with flour or corn meal. Divide the dough into four equal pieces. Roll three into "snakes" and make a large braid, pinching the ends to keep them together. Divide the fourth piece into three and make a smaller braid, and lay this over the larger braid. Lay the braided loaf on the pan.

  6. Cover again and let rise again for at least an hour. Preheat the oven to 350.

  7. Before baking, make an egg wash out of egg yolks and a little water. Brush the egg wash all over the loaf, and sprinkle with poppy seeds or "everything" topping.

  8. Bake 25 minutes or more until the loaf is a deep golden color.

 

What’s for supper? Vol. 246: Comfort food

It’s been quite a couple of weeks. If you are thinking to yourself, “They are not eating like it’s Lent!” you are right. We are eating like a family who are being very nice to a grieving person who went a little bit crackerdog after the funeral, and whose comfort food is food.  Damien and the kids have done so much of the cooking. (For those who don’t know, my mom died two weeks ago.)

These are the food highlights of the last 2.5 weeks or so:

Khachapuri and asparagus

I shared the recipe for this on the morning before I made it, and all I had to report at the time were high hopes. Well, they were absolutely delicious. This is a Georgian (as in the country) dish, a cheese-filled bread boat with an egg cooked into the middle. I made a triple recipe of this recipe. FABULOUS. 

I didn’t end up using much more than half of the filling, though, and they still overflowed.

The kids immediately started suggesting variations of various meats and sauces that could be added, which I am not opposed to, but there’s also something to be said for not turning everything into pizza. 

Anyway, will definitely make again. I may use ready-made dough next time to speed things along. You can see that you add and cook the egg just briefly toward the end, and then you can break up the yolk and stir it into the hot cheese. I also threw some hot pepper flakes on top.

I also pan-cooked a bunch of asparagus in olive oil and squeezed fresh lemon juice on top. The lemon juice seeped into the khapachuri on my plate, and that was not a problem at all. 

Comfort-your-wife sandwiches

One night Damien made a big platter of sandwiches with all kinds of lovely salamis and other cured meats, cheeses, tomatoes, and lots of basil, olive oil and balsamic vinegar, and freshly-ground salat and pepper

and another night he made Reubens with kosher dills and jalapeño kettle chips, which isn’t necessarily a photogenic meal, but oh man.

The deli a special sale on sliced corned beef (which either is or isn’t the same thing as pastrami, I forget) and Swiss cheese together, so he got a bunch and made grilled sandwiches with Russian dressing and sauerkraut. Heavenly.

St. Patrick’s Day

Everyone having finally acknowledged no one is really crazy about the corned beef boiled dinner, Damien made a full Irish breakfast instead. Completely delicious, and an insane amount of food. 

Irish bangers, bacon, baked beans, grilled tomatoes, roast potatoes and mushrooms, sourdough toast, and fried eggs on top, and everything cooked in lots of butter and bacon grease. Here’s a better view of those wonderful mushroom and potatoes:

I wasn’t a big fan of the Irish bangers — they were kind of mealy — but other than that, I think we’ll have this for St. Patrick’s Day every year from now on. 

St. Joseph’s Day

We moved our annual Italian feast from Columbus Day to St. Joseph’s day. Works for me. Clara put together a giant antipasto plate, which she replenished several times as it was ravaged 

and Damien made his lovely pork and veal ragu with fettucine (you can’t see the lovely savory gravyish part here, but there was lots of it) 

and I made a stab at making suppli, but I forgot you have to chill the risotto really well to form it into balls. So I just put it back in the fridge (and everyone was already pretty stuffed anyway}. We had Italian ices for dessert, just as St. Joseph would have wanted. 

Then on Sunday, Clara made the risotto into suppli while I took the kids to the farm, and then I fried them up for dinner, and even the stove was happy

I had to throw some of the suppli back in the oven for a while to make sure the cheese inside was completely melted. Worth the wait.

We also had the leftover ragu, and I made cannoli, which was also supposed to be on Friday.

I made the filling with just ricotta cheese, powdered sugar, and a little almond extract. The taste was perfect, but I wish it was a little thicker and less runny. Other than letting it sit in the colander longer, any tips on that? 

Ham and biscuits

Only worth mentioning because one of the biscuits, the one formed out of all the leftover scraps crammed together, kinda looked like a turkey.

It is a good recipe. A little weird, as it calls for cream of tartar and eggs, but they always come out light inside, with a nice fragile buttery crust.

Pizza

We’re basically empty-nesters, with only nine children at home, and I’m finally ready to face the fact that we don’t need six extra large pizzas anymore. That is too much pizza. But the final Pizza No. 6 was a doozy: Olives, red onions, artichoke hearts, fresh garlic, sun-dried tomatoes, and little blobs of pesto. 

We usually use Portland Pie frozen pizza dough,  which comes in generous portions and is easy to handle, especially the beer one. This time we tried their Everything dough (with “everything bagel” seasoning mixed it). I’m not a fan. It tore very easily and didn’t rise well, and I guess I just don’t want poppy seeds in my pizza dough after all.

Here’s a pro tip for you: While you’re sitting in the kitchen for forty minutes cooking two pizzas at a time, it’s okay to pass the time by snacking on a few sun-dried tomatoes, but it’s not a great idea to mindlessly scarf down about a cubic foot of them, unless you are angry at your stomach and wish to punish it. And everyone watching TV with you that evening when it’s too chilly to open a window. Wooooo-eeeeee. I sure do like them sun-dried tomaters. 

Tonight Damien is going to teach Irene how to make Marcella Hazan’s magic sauce, since she is its biggest fan.

Marcella Hazan's tomato sauce

We made a quadruple recipe of this for twelve people. 

Keyword Marcella Hazan, pasta, spaghetti, tomatoes

Ingredients

  • 28 oz can crushed tomatoes or whole tomatoes, broken up
  • 1 onion peeled and cut in half
  • salt to taste
  • 5 Tbsp butter

Instructions

  1. Put all ingredients in a heavy pot.

  2. Simmer at least 90 minutes. 

  3. Take out the onions.

  4. I'm freaking serious, that's it!

Suppli (or Arancini)

Breaded, deep fried balls of risotto with a center of melted mozzarella. 
Make the risotto first and leave time to refrigerate the suppli before deep frying. 

Ingredients

  • 12 cups chicken stock
  • 8 + 8 Tbs butter
  • 1 cup finely chopped onions
  • 4 cups raw rice
  • 1 cup dry white wine
  • 1 cup grated parmesan cheese

To make suppli out of the risotto:

  • risotto
  • 1 beaten egg FOR EACH CUP OF RISOTTO
  • bread crumbs or panko bread crumbs
  • plenty of oil for frying
  • mozzarella in one-inch cubes (I use about a pound of cheese per 24 suppli)

Instructions

  1. Makes enough risotto for 24+ suppli the size of goose eggs.


    Set chicken stock to simmer in a pot.

    In a large pan, melt 8 Tbs. of the butter, and cook onions slowly until soft but not brown.

    Stir in raw rice and cook 7-8 minutes or more, stirring, until the grains glisten and are opaque.

    Pour in the wine and boil until wine is absorbed.

    Add 4 cups of simmering stock and cook uncovered, stirring occasionally until the liquid is almost absorbed.

    Add 4 more cups of stock and cook until absorbed.

    If the rice is not tender by this point, keep adding cups of stock until it is tender. You really want the rice to expand and become creamy.

    When rice is done, gently stir in the other 8 Tbs of butter and the grated cheese with a fork.

  2. This risotto is wonderful to eat on its own, but if you want to make suppli out of it, read on!

  3. TO MAKE THE SUPPLI:

    Beat the eggs and gently mix them into the risotto.


    Scoop up about 1/4 cup risotto mixture. Press a cube of mozzarella. Top with another 1/4 cup scoop of risotto. Roll and form an egg shape with your hands.


    Roll and coat each risotto ball in bread crumbs and lay in pan to refrigerate. 


    Chill for at least an hour to make the balls hold together when you fry them.


    Put enough oil in pan to submerge the suppli. Heat slowly until it's bubbling nicely, but not so hot that it's smoking. It's the right temperature when little bubbles form on a wooden spoon submerged in the oil. 


    Preheat the oven if you are making a large batch, and put a paper-lined pan in the oven.


    Carefully lower suppli into the oil. Don't crowd them! Just do a few at a time. Let them fry for a few minutes and gently dislodge them from the bottom. Turn once if necessary. They should be golden brown all over. 


    Carefully remove the suppli from the oil with a slotted spoon and eat immediately, or keep them warm in the oven. 

moron biscuits

Because I've been trying all my life to make nice biscuits and I was too much of a moron, until I discovered this recipe. It has egg and cream of tartar, which is weird, but they come out great every time. Flaky little crust, lovely, lofty insides, rich, buttery taste.

Ingredients

  • 6 cups flour
  • 6 Tbsp sugar
  • 1 tsp salt
  • 2 Tbsp + 2 tsp baking powder
  • 1 tsp cream of tartar
  • 1-1/2 cups (3 sticks) butter, chilled
  • 2 eggs
  • 2 cups milk

Instructions

  1. Preheat oven to 450.

  2. In a bowl, combine the flour, sugar, salt, baking powder, and cream of tartar.

  3. Grate the chilled butter with a box grater into the dry ingredients.

  4. Stir in the milk and egg and mix until just combined. Don't overwork it. It's fine to see little bits of butter.

  5. On a floured surface, knead the dough 10-15 times. If it's very sticky, add a little flour.

  6. With your hands, press the dough out until it's about an inch thick. Cut biscuits. Depending on the size, you can probably get 20 medium-sized biscuits with this recipe.

  7. Grease a pan and bake for 10-15 minutes or until tops are golden brown.

What’s for supper? Vol. 245: Pugsy

Did you read the CNN article about What it says about us when we want a cook’s recipe but not their humanity? You have to get through quite a few paragraphs before they get to the punchline, which is that, when you just skip to to the recipe and don’t read all the chit chat and cultural background and tips about the best way to deflower a butternut squash, you are at risk of treating food like a commodity

Ope, that wasn’t supposed to be a joke? All right.

Anyway, as a more or less bona fide albeit very small time food blogger, I will tell you a secret: The reason food bloggers write so much extra stuff is because that makes people stay on the page longer, and then they get paid more. That’s it. That’s the reason. Many people, me included, also enjoy talking about food; but the main driving force behind chatty food blogs is that the person who did the work needs to get paid, and that means ads, which means eyeballs, which means words and pictures.

There is nothing nefarious about this. Some of these bloggers work their absolute tails off developing recipes, producing and editing videos, taking dozens of process shots, formatting everything, and promoting it all, and it’s not a volunteer situation! They have to get paid for their work. On food blogger message boards, they’re constantly agonizing over how to keep people there longer without annoying them so much that they leave.  Of course its tiresome when the best they can come up with is very obvious padding, like,  “Do you like corn? I do. Corn is just the best. When I see corn in the supermarket, I always think, ‘Gotta get some!’ and I load my cart right up! It just feels like summer. Summer in every bite. I will show you how to get that good old summer-in-every-bite feeling with this simple recipe that shows you how to cook corn, because corn is just the best” stuff. But the recipe is free, so.

There is also nothing wrong or dehumanizing, as the CNN article suggests, with a reader deciding they don’t care about all the extries and they just want the recipe card. Sometimes it’s 5:12 PM and you just need the recipe card. It’s just something to keep in mind: Food bloggers are not ravening egomaniacs who think the world is desperate to hear their opinions on copycat Southwest Chicken Irresist-a-bowl. They’re just trying to get paid in exchange for a service, just like everyone else. (I’m different, of course. I have a weird set up and unusually supportive readers who are nonetheless probably just about done hearing my thoughts on this topic.)

WELL, now that I’ve dragged you through 424 pointless words about words about food, I guess we can talk about food. Sorry. Here’s what we ate this week:

SATURDAY
Bacon cheeseburgers, fries, birthday cake

Elijah’s birthday! Following her magnificent performance with Corrie’s Teen Titans cookie cake a few weeks ago, she volunteered to do Elijah’s cake as well. This was a Sonic the Hedgehog cake

and it included Sonic, some other colorful characters that I have strenuously avoiding familiarity with, and also, if you look closely at what is lurking in the background, something called Pugsy

which is a character Elijah made up for the sole purpose of annoying his sisters.

Aldi pizza

There was some kind of hullabloo, I forget what, so we just had Aldi pizza. 

MONDAY
Blueberry chicken salad

Always popular. I drizzled a bunch of boneless chicken breasts with olive oil and seasoned them heavy with salt, pepper, garlic powder, and oregano, and broiled and sliced them up. 

We had acres and acres of leftover buns and rolls in the house, so I made a ton of croutons. Ended up burning half of them, but nobody complained. And that is the magic of using a ludicrous amount of butter on your croutons. 

We also had diced red onion, blueberries of course, and toasted almonds. I had my salad with red wine vinegar. 

Nut note: You can easily toast almonds and other nuts by spreading them on a plate and microwaving them for two minutes or so. They come out much more even than with toasting in the oven, and it’s harder to burn them. Some of us are always on the lookout for opportunities to burn things.

TUESDAY
Eggplant parmesan sandwiches on unfortunately multigrain bread

My car was in the shop, so Damien did all the driving for most of the week, which meant I had an unbroken swath of time in the kitchen. I decided to try eggplant parmesan over spaghetti. Then I thought I’d made some french bread for a side, too. Then, I decided I’d made eggplant parm sandwiches on homemade bread, instead.

So I’m making the dough with this very reliable recipe,

and what should randomly and unpredictably occur with no possible way of being warned? I ran out of flour. Facebook friends suggested I could actually use it, wet as it was

and just give it much longer to rise, and then bake it in a hot dutch oven, and I’d get a nice crusty loaf. I didn’t have the extra time, though. So I put some oats in the blender and ground them up pretty fine. I added a bunch of this, but it still looked too wet, so I uhh dumped in some pancake mix. 

I will be honest, I was starting to unravel a tiny bit at this point. I already knew people were not going to be thrilled at having a meatless meal in the middle of the week, so I was really counting on the promise of lovely fresh bread to make it seem appealing. And now I had a bunch of fricken oats in there. 

One smart thing I did was proof the dough in the Instant Pot. I just sprayed the pot with cooking spray and chucked the dough in there, sealed the top, and pressed “yogurt.” An hour later it was more than doubled, and zero cats had trod in it, which is by no means a given when I proof dough anywhere else in the house. 

Then I divided the dough into twelve lumps and set them to rise again. They didn’t rise terribly well, but by this time it was getting close to dinner, so I baked those mofos. They came out . . .  okay. They would have been fine with soup or something, but really not what you want for sandwich rolls. 

They were kind of tired-looking, and very grainy and crumbly inside, and they tasted like oats for some unknown reason. 

The eggplant turned out perfect. I salted, rinsed, dried, breaded, and fried the slices, then layered them with sauce and mozzarella cheese, and baked the whole thing, then carved it up so everyone got a nice stack of cheesy saucy eggplant on their roll, plus a scoop of sauce on top. 

It still tasted like eggplant, though. I always forget this about eggplant. Eggplants have wasted all their splendor in how they look when they’re fresh off the vine, and by the time you eat them, they have very little left to offer, other than a faint muskiness. The mild sauce, mild cheese, and crumbly oaty bread together with eggplant was . . . well, my husband described it as “filling,” and it was that. 

The only eggplant recipe I’ve ever loved is this one for spicy, crisp fried eggplant with yogurt sauce. 

I wish I had some right now. *sob*

WEDNESDAY
Gochujang pork chops, rice, sesame carrot slaw

I had twelve unexciting pork chops and just slathered them with this spicy Korean marinade

for about an hour before shoving them under the broiler, turning once. Voila, exciting! Great flavor, no skill required. I ordered another little tub gochujang while it cooked. 

I really wanted gochujang bulgoki with the carrots and onions and nori and everything, but I was in a rush, and had the wrong kind of pork. So I cribbed the carrot slaw recipe from Two Peas and Their Pod and made some modifications (I made it a little simpler and quite a bit sweeter). I’ll put my recipe card at the end. 

Pretty popular. It’s sweet and bright and spicy and crunchy, and made a very nice accompaniment to the somewhat heavy and sticky marinade on the meat. So, hooray, another side possibility! I’m always hunting for more sides. If I never bake another potato in my whole life, I will be content. 

THURSDAY
Grilled ham and cheese, chips

Nothing to report. Well, I usually say that my secret is I apply a little skim of mayonnaise on the outside of the bread before frying the sandwich in butter. The truth is, I apply the mayo with a spatula, and it’s considerably more than a skim. What, you want to make a skinny corpse someday? Have some mayo.

FRIDAY
Khachapuri (Georgian cheese bread)

Another new recipe that’s been haunting me for a few years now, so I’m finally trying it today. It’s little kayak-shaped bread bowls full of three kinds of cheese, with an egg cooked into it. Eh? Eh? We’ll see if I screw up the breadPROBABLY but it sounds very promising.

I also grabbed some asparagus, which I will probably sauté, and some cans of tomato soup. Sounds like dinner to me. 

Fried eggplant

You can salt the eggplant slices many hours ahead of time, even overnight, to dry them before frying.

Ingredients

  • 3 medium eggplants
  • salt for drying out the eggplant

veg oil for frying

3 cups flour

  • 1 tsp baking powder
  • 1 Tbsp cumin
  • 1 Tbsp paprika
  • 1 Tbsp red pepper flakes
  • 2-1/2 cups water
  • 1 Tbsp veg oil
  • optional: kosher salt for sprinkling

Instructions

  1. Cut the ends off the eggplant and slice it into one-inch slices.
    Salt them thoroughly on both sides and lay on paper towels on a tray (layering if necessary). Let sit for half an hour (or as long as overnight) to draw out some of the moisture. 

  2. Mix flour and seasonings in a bowl, add the water and teaspoon of oil, and beat into a batter. Preheat oven for warming. 

  3. Put oil in heavy pan and heat until it's hot but not smoking. Prepare a tray with paper towels.

  4. Dredge the eggplant slices through the batter on both sides, scraping off excess if necessary, and carefully lay them in the hot oil, and fry until crisp, turning once. Fry in batches, giving them plenty of room to fry.

  5. Remove eggplant slices to tray with paper towels and sprinkle with kosher salt if you like. You can keep them warm in the oven for a short time.  

  6. Serve with yogurt sauce or marinara sauce.

French bread

Makes four long loaves. You can make the dough in one batch in a standard-sized standing mixer bowl if you are careful!

I have a hard time getting the water temperature right for yeast. One thing to know is if your water is too cool, the yeast will proof eventually; it will just take longer. So if you're nervous, err on the side of coolness.

Ingredients

  • 4-1/2 cups warm water
  • 1/4 cup sugar
  • 2 Tbsp active dry yeast
  • 5 tsp salt
  • 1/4 cup olive or canola oil
  • 10-12 cups flour
  • butter for greasing the pan (can also use parchment paper) and for running over the hot bread (optional)
  • corn meal for sprinkling on pan (optional)

Instructions

  1. In the bowl of a standing mixer, put the warm water, and mix in the sugar and yeast until dissolved. Let stand at least five minutes until it foams a bit. If the water is too cool, it's okay; it will just take longer.

  2. Fit on the dough hook and add the salt, oil, and six of the cups of flour. Add the flour gradually, so it doesn't spurt all over the place. Mix and low and then medium speed. Gradually add more flour, one cup at a time, until the dough is smooth and comes away from the side of the bowl as you mix. It should be tender but not sticky.

  3. Lightly grease a bowl and put the dough ball in it. Cover with a damp towel or lightly cover with plastic wrap and set in a warm place to rise for about an hour, until it's about double in size.

  4. Flour a working surface. Divide the dough into four balls. Taking one at a time, roll, pat, and/or stretch it out until it's a rough rectangle about 9x13" (a little bigger than a piece of looseleaf paper).

  5. Roll the long side of the dough up into a long cylinder and pinch the seam shut, and pinch the ends, so it stays rolled up. It doesn't have to be super tight, but you don't want a ton of air trapped in it.

  6. Butter some large pans. Sprinkle them with cornmeal if you like. You can also line them with parchment paper. Lay the loaves on the pans.

  7. Cover them with damp cloths or plastic wrap again and set to rise in a warm place again, until they come close to double in size. Preheat the oven to 375.

  8. Give each loaf several deep, diagonal slashes with a sharp knife. This will allow the loaves to rise without exploding. Put the pans in the oven and throw some ice cubes in the bottom of the oven, or spray some water in with a mister, and close the oven quickly, to give the bread a nice crust.

  9. Bake 25 minutes or more until the crust is golden. One pan may need to bake a few minutes longer.

  10. Run some butter over the crust of the hot bread if you like, to make it shiny and even yummier.

Sesame carrot slaw

Ingredients

Salad:

  • 2 lbs carrots, shredded
  • 2 red bell peppers, seeded and sliced thin

Dressing:

  • 1/3 cup veg oil
  • 1/3 cup soy sauce
  • 1/3 cup lime juice (about three large limes' worth)
  • 1/3 cup brown sugar, packed
  • 8 cloves garlic, crushed or minced
  • 1 Tbsp powdered ginger
  • 2 tsp red pepper flakes
  • 1 Tbsp sesame seeds

Instructions

  1. Mix dressing ingredients together. Combine in bowl with carrots and peppers.

 

Gochujang bulgoki (spicy Korean pork)


Ingredients

  • 1.5 pound boneless pork, sliced thin
  • 4 carrots in matchsticks or shreds
  • 1 onion sliced thin

sauce:

  • 5 generous Tbsp gochujang (fermented pepper paste)
  • 2 Tbsp honey
  • 2 tsp sugar
  • 2 Tbsp soy sauce
  • 5 cloves minced garlic

Serve with white rice and nori (seaweed sheets) or lettuce leaves to wrap

Instructions

  1. Combine pork, onions, and carrots.

    Mix together all sauce ingredients and stir into pork and vegetables. 

    Cover and let marinate for several hours or overnight.

    Heat a pan with a little oil and sauté the pork mixture until pork is cooked through.

    Serve with rice and lettuce or nori. Eat by taking pieces of lettuce or nori, putting a scoop of meat and rice in, and making little bundles to eat.

This week’s menu was designed with weight loss in mind. All you have to do is completely avoid these seven meals, and the pounds will simply melt away, ho ho ho.

Here’s what we had:

SATUDAY
Monte Cristo sandwiches with honey

I’ve tried croque monsieur sandwiches, which are similar, except they have a cheese sauce on the outside, and I thought they were kind of gross. These are also ham and cheese but dipped in seasoned egg before frying, so they are hearty but not gloppy.

Some people serve these with powdered sugar and I just couldn’t get my brain to accept powdered sugar that close to mustard. But I did drizzle my sandwich with honey, and that bridged the gap between sweet and savory very nicely.

I didn’t invest in gruyere, but just bought a bunch of Swiss. I did buy a nicer ham and some niceish bread. So I spread mustard on one slice and mayo on the other, then cheese, ham, and more cheese, and you dip the whole thing in beaten eggs, then fry in plenty of butter. I thought they were delicious, definitely more of a treat than plain old grilled ham and cheese.

SUNDAY
Cheesy pepperoni chicken breast rolls, french bread

Love making keto recipes and then baking four loaves of french bread to go with it. 

The chicken turned out fine. It tasted like exactly what it was: Chicken breasts cut in half, pounded thin, and rolled up around pepperoni and mozzarella, then baked with marinara sauce. I have a very nice picture of it, where you can really see how the pepperoni is peeking out from inside the cheese layer and it’s all wrapped up in chicken breast, but a little bird tapped me on the shoulder and said, “Simcha, that’s not pepperoni chicken. That is yoni chicken.” And the bird was right. So here’s a different picture instead, without so much sacred feminine in it.

As you can see, I secured the chicken with a wooden skewer to keep it in place, and that worked fine. Oh, I guess I sprinkled a bunch of fresh-grated parmesan on top before baking. I covered it with tin foil for most of the baking time, then took it off toward the end. 

It was pretty quick to make, and if I were ever going to attempt to fuel a work crew for hammering out a tunnel through a mountain, and they needed a lot of protein and calories, I would definitely make it again. But not otherwise. It was just too . . . HERE, MEAT.

I don’t know. I like meat, but I don’t need a wall of meat. 

Sophia was interested in learning how to make bread, so I mostly just advised her while she made this easy french bread recipe.

MONDAY
Sausage, egg, and cheese sandwiches on bagels

Nothing to report. We were out of butter, so I fried the eggs in oil, which does make the whites bubble up a bit more, and gives them a neat little crust.

Everyone was pretty excited about the orange juice. 

TUESDAY
Hamburgers, veggies and dip

Nothing to report. Ground beef was on sale because of the Super Bowl, so the burgers were Rather Large. I did manage to serve broccoli before it went bad, which is the first time in months. I throw out broccoli like it’s my job.

We also had chips, but I heroically abstained from eating any. Just kidding! I ate them before I took the picture. 

WEDNESDAY
Buffalo chicken quesadillas, guacamole and chips

Something a little different. I bought a few bags of frozen buffalo chicken tenders (also on Super Bowl sale) which I cooked and cut into strips and fried in quesadillas with cheddar cheese. I was going to sprinkle in some crumbled blue cheese, but do you know, it’s really hard to tell if very old blue cheese is too old or not, so I made a few people smell it and then threw it away. 

I also chopped up a bunch of scallions but then randomly got mad and didn’t feel like adding them. I still wanted to get blue cheese in there, so I added some blue cheese dressing to some sour cream, and it was . . . not actually delicious. Maybe I just don’t like blue cheese, I don’t know. 

Anyway, ths quesadillas variation was very tasty and I will definitely make it again.  Look, you can see my pretty new flower-shaped dishes! I found a set of 8 in various sizes at the Salvation Army. Some are white, some are green, and some are yellow. 

Made a ton of guacamole (avocados 49 cents, courtesy of football!)

THURSDAY
Chicken salad with feta, green apples, red onions, and candied walnuts

The original plan for this meal was a nice salad with chicken, blueberry, feta, red onions, and almonds. I get to the store and they are all out of blueberry. Fine, we decide to have green apples instead. A child earnestly requests croutons, and I agree, because I’m feeling bad about the blueberries. Oh no, all the old bread is moldy! This salad is going to be a salad of sadness! I realized we had tons of walnuts in the house from Christmas treats I never got around to making, so I made candied walnuts.

Very simple recipe — you just stand there stirring walnuts, butter, and sugar in a pot until the butter and sugar melt and coat the nuts, and then you spread it in a pan and break it up so they don’t clump, and that’s it. It turns out this takes KIND OF A LONG TIME if you’re sextupling the recipe. But they turned out great. 

These would be useful for any number of salads, or just for snacking on, and you could fiddle with the seasonings and add chili powder or cinnamon or whatever. 

Look how pretty the salad was! 

I had mine with balsamic vinegar. Very filling. If I’m going to have a salad for dinner, there has to be serious detritus at the bottom of the plate.

FRIDAY
Marcella Hazan’s red sauce with spaghetti

The real reason I wanted to make this is so I could get a second giant can of whole tomatoes and make some stilts for Corrie. Because we need more clomping and falling down, I don’t know. We used to have giant coffee cans in the house all the time, used mainly for stilts, banks, and crayon cans. The smells of crayons and coffee are forever wedded in my head. 

If you haven’t tried this sauce yet, I beg of you. The time has come. It has three, count ’em, THREE ingredients, plus a pinch of salt; it requires no skill, and it tastes like you slaved over it for hours. The recipe says to take out the onion before serving, but we have at least one kid who prefers to keep the onion, for purposes of devouring it whole.

White Lady From NH's Guacamole

Ingredients

  • 4 avocados
  • 1 medium tomato, diced
  • 1 medium jalapeno, minced
  • 1/2 cup cilantro, chopped roughly
  • 1 Tbsp minced garlic
  • 2 limes juiced
  • 1 tsp chili powder
  • salt and pepper
  • 1/2 red onion, diced

Instructions

  1. Peel avocados. Mash two and dice two. 

  2. Mix together with rest of ingredients and add seasonings.

  3. Cover tightly, as it becomes discolored quickly. 

 

Candied nuts (walnuts or pecans)

Ingredients

  • 6 cups nuts, whole or in large pieces
  • 1-1/2 cups white sugar
  • 6 Tbsp butter

optional:

  • any spices or seasonings, you want: cinnamon, cayenne pepper, etc.

Instructions

  1. Line a large pan with parchment paper.

  2. Put all ingredients in a heavy pot and cook on medium, stirring frequently, until the butter and sugar are melted together and the nuts are all coated. Be careful not to let them burn.

  3. Pour the sugared nuts onto the prepared pan and immediately break them up so they don't clump. Let them sit for several minutes so the sugar coating hardens.

  4. Eat immediately or store them in an airtight container for several weeks.

 

Marcella Hazan's tomato sauce

We made a quadruple recipe of this for twelve people. 

Keyword Marcella Hazan, pasta, spaghetti, tomatoes

Ingredients

  • 28 oz can crushed tomatoes or whole tomatoes, broken up
  • 1 onion peeled and cut in half
  • salt to taste
  • 5 Tbsp butter

Instructions

  1. Put all ingredients in a heavy pot.

  2. Simmer at least 90 minutes. 

  3. Take out the onions.

  4. I'm freaking serious, that's it!

What’s for supper? Vol. 238: Will the real potato butt please stand up?

First, some important news. I don’t mean to be melodramatic, but this week, we all saw the dawn of a new era in America. It’s easy to sit around and hope for great things on a macro level, but it behooves us all to look around and see what changes we can make on a personal level. I’ve been thinking hard about the direction I want to go in, and after much prayer and reflection, I’m ready to announce the launching of a brand new project, and I truly hope you will all join me. It’s called Potatoes with butts, and you can follow it @PotatoesButts.What it is, is a twitter account that is just photos of potatoes with butts. I got the idea last week, when I saw this potato with a butt.

Here’s the thing, folks. This won’t work if I try to do it alone. My DMs are always open, and you can submit your photos of potatoes with butts and I will share them with mankind, and together we will do our part to make the world a little more full of photos of potatoes with butts. In these unprecedented times let us all work toward unity, and never allow ourselves to be cleft in two unless we are a potato with a butt. 

In other news, I am determined to be less of a potato butt on a personal level, so I started on my treadmill again, and I was passing the time by processing some food photo files. Here’s a little preview of what you’re in for this week:

Spaghetti carbonara, french bread

Delightful as always, and low-skill (although cooking for a crowd does require you to keep your head). I used four pounds of bacon and 3-1/2 pounds of spaghetti, and 423 mashed ends of butter sticks, and a whole thing of parmesan cheese.

Some day I’ll get a block of parmesan and grate it fresh into the carbonara, but even the jarred stuff makes a great meal.

I haven’t made fresh bread for a while, so I was a little nervous, but it turned out well, fragrant, light, and a little sweet.

Nice simple recipe, just flour, water, salt, yeast, sugar, oil. A little cornmeal for the pan and a little butter to run over the hot top.

This recipe makes four long, fat loaves. (I do not intend to start a Twitter account for loaves of french bread that look like something it’s not. Because it’s VULGAR, that’s why.) A couple of them split, as you can see, because I didn’t slash them deeply enough, but no one complained. If you’re not great with bread, this is a reliable recipe, as long as you give it plenty of time to rise (it takes two rises).

Ina Garten’s roast chicken with fennel and lemon, candied sweet potatoes, cranberry sauce

Now here is a tasty roast chicken. Damien volunteered to make the main course, and he followed Ina Garten’s recipe, which calls for stuffing the bird with lemons, garlic, and thyme, and roasting it atop a bed of fennel, onion, carrots.

Very, very juicy and tasty. The lemon, garlic, and thyme flavors really make themselves known in the meat, but it was the caramelized vegetables that really wowed me, especially the fennel. Must get more fennel into life.

This led to me browsing my way through Marcella Hazan’s Essentials of Italian Classic Cooking, so we shall see what fennel may come.

I also opened up some cans of cranberry sauce, which turned out to be whole berry because I’m a monster; and I made some candied sweet potatoes. It’s a fine recipe

MONDAY
Hot dogs of many nations, cheezy weezies

Not even really hot dogs of many nations. I intended to serve Chicago-style hot dogs (mustard, tomatoes, pickles, pickle relish, onion, pickled peppers, and celery salt) and buffalo hot dogs (blue cheese, scallions, and hot sauce), but by the time dinner came, buffalo seemed adventurous enough. 

Ugh, I will be so glad when it’s finally light at dinnertime again. The lighting is killing me. You can see all the grime in my house, but everything looks so garish and dire. Oh well. 

TUESDAY
Oven fried pork chops, pink risotto, peas

I’m just over here exhausted with all my same old same old pork recipes, so I poked around a little and tried something different, yet decidedly un-exotic: Breaded fried pork chops.

I was planning to just chunk them in the oven, but at the last minute I thought they really needed a little browning up first, so I fried them in oil just to cook the outside

and then baked them to make sure the meat was done. I thought they were great, if a little bit of a hassle (because I made 12).

Will make again, probably using boneless pork ribs. The breading could easily be made more spicy, but it had a good, balanced flavor, and the texture was perfect, crunchy and light, and the meat was juicy. My mother used to make pork chops often, and they looked and tasted like a mitten that had fallen in the slush by the bus stop and been run over repeatedly, so I feel pretty good about this.

I made my reliable Instant Pot risotto, which is so easy and always turns out creamy and lovely, especially when I’m generous with the butter and cheese. On this day I was a little low on cheese, so it was slightly less gooey than normal, but still very nice.

It calls for chicken broth and white wine, but all I had was three half-empty bottles of rosé and merlot, so in they went. Predictably, this changed the flavor slightly, and the color dramatically. 

I definitely prefer white wine in this, but the kids thought pink risotto was amusing, and I cleared up some counter space, so overall a win. 

WEDNESDAY
Pork ramen

The last few times I made fancy ramen, it caused a lot of suffering, I mean really bad suffering, like really bad, because someone’s mother had made JUST RAMEN FOR SUPPER (and meat and vegetables and crunchy noodles and sprouts and sauces and eggs), and so there was a lot left over. So this time, I only made six packages of ramen. You will be surprised to hear that everyone was very excited about ramen for supper, because it’s SO GOOD, and they gobbled it up and howled for more. So Lena made some more, but by the time it was ready, everyone had left to go lie on their necks and listen to K-pop. 

Anyway, here’s my ramen.

I ha it with wilted spinach, scallions, accidentally hard boiled eggs, quick-pickled carrots, scallions, pea shoots, a little broccoli, and pork sautéed in sesame oil, then sliced and simmered in soy sauce. I usually put hot sauce on it, but I tried some sweet chili oil and it wasn’t great. The carrots and vegetables added enough sweetness. 

THURSDAY
Beef fajita bowls

I love this meal. I got the meat marinating first thing, using this very sharp, savory marinade

I actually used lemon juice rather than lime, and didn’t really notice the difference. Then, close to dinner time, I was afraid there wasn’t enough meat, so I went out and bought more, so some of the meat only had an hour to marinate. 

Ladies and gentlemen, marinating is magic. I was too hungry to stop and take a picture, but the difference between the two hunks of meat was astounding. The acid in the lemon (or lime) juice and the Worcestershire sauce breaks down the connective tissue and makes it so tender and yielding, and really opens it up to receive the flavor. 

I made a big pot of rice in the Instant Pot, and I set out bowls of everything so people could build their dinner as they pleased. I chose, uh, everything: Rice, beef, some sweet corn slightly charred in oil, scallions, fried onions and sweet peppers, black beans with tomatoes and chili peppers, cheddar cheese, sour cream, and corn chips. Oh, and some Taijin chili lime powder.

I scooped up a bunch of the gravy and poured it over the bowl because I can’t get enough of that tangy, garlicky juice. So good. 

I really love this meal. Beef is my favorite meat by far, and this is one of my favorite things to do with it. 

FRIDAY
Fish tacos

I guess just tortillas, batter-fried fish from frozen, shredded cabbage, salsa, sour cream, limes, and avocados. This would be great with guacamole, or, even better, pico de gallo, but we always have it on Fridays when my ambition is so low.

Spaghetti carbonara

An easy, delicious meal.

Ingredients

  • 3 lbs bacon
  • 3 lbs spaghetti
  • 1 to 1-1/2 sticks butter
  • 6 eggs, beaten
  • lots of pepper
  • 6-8 oz grated parmesan cheese

Instructions

  1. Fry the bacon until it is crisp. Drain and break it into pieces.

  2. Boil the spaghetti in salted water until al dente. If you like, add some bacon grease to the boiling water.

  3. Drain the spaghetti and return it to the pot. Add the butter, pieces of bacon, parmesan cheese, and pepper and mix it up until the butter is melted.

  4. Add the raw beaten egg and mix it quickly until the spaghetti is coated. Serve immediately.

 

French bread

Makes four long loaves. You can make the dough in one batch in a standard-sized standing mixer bowl if you are careful!

I have a hard time getting the water temperature right for yeast. One thing to know is if your water is too cool, the yeast will proof eventually; it will just take longer. So if you're nervous, err on the side of coolness.

Ingredients

  • 4-1/2 cups warm water
  • 1/4 cup sugar
  • 2 Tbsp active dry yeast
  • 5 tsp salt
  • 1/4 cup olive or canola oil
  • 10-12 cups flour
  • butter for greasing the pan (can also use parchment paper) and for running over the hot bread (optional)
  • corn meal for sprinkling on pan (optional)

Instructions

  1. In the bowl of a standing mixer, put the warm water, and mix in the sugar and yeast until dissolved. Let stand at least five minutes until it foams a bit. If the water is too cool, it's okay; it will just take longer.

  2. Fit on the dough hook and add the salt, oil, and six of the cups of flour. Add the flour gradually, so it doesn't spurt all over the place. Mix and low and then medium speed. Gradually add more flour, one cup at a time, until the dough is smooth and comes away from the side of the bowl as you mix. It should be tender but not sticky.

  3. Lightly grease a bowl and put the dough ball in it. Cover with a damp towel or lightly cover with plastic wrap and set in a warm place to rise for about an hour, until it's about double in size.

  4. Flour a working surface. Divide the dough into four balls. Taking one at a time, roll, pat, and/or stretch it out until it's a rough rectangle about 9x13" (a little bigger than a piece of looseleaf paper).

  5. Roll the long side of the dough up into a long cylinder and pinch the seam shut, and pinch the ends, so it stays rolled up. It doesn't have to be super tight, but you don't want a ton of air trapped in it.

  6. Butter some large pans. Sprinkle them with cornmeal if you like. You can also line them with parchment paper. Lay the loaves on the pans.

  7. Cover them with damp cloths or plastic wrap again and set to rise in a warm place again, until they come close to double in size. Preheat the oven to 375.

  8. Give each loaf several deep, diagonal slashes with a sharp knife. This will allow the loaves to rise without exploding. Put the pans in the oven and throw some ice cubes in the bottom of the oven, or spray some water in with a mister, and close the oven quickly, to give the bread a nice crust.

  9. Bake 25 minutes or more until the crust is golden. One pan may need to bake a few minutes longer.

  10. Run some butter over the crust of the hot bread if you like, to make it shiny and even yummier.

Candied sweet potatoes

Easy and pleasant. Please do not top with marshmallows, as that is an abomination.

Ingredients

  • 3-4 lbs sweet potatoes, peeled and cut into chunks. Canned is fine, although they will be slightly mushier.
  • 6 Tbsp butter, melted
  • 2/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 400. Grease a baking dish.

  2. Combine the sugar, cinnamon, salt, and nutmeg. Add the melted butter and stir to make a paste.

  3. If you're using canned sweet potatoes, drain them. Spread the potatoes in the dish and distribute the butter-sugar mixture evenly over them. Use a spoon or spatula to toss the potatoes so they are coated with the mixture.

  4. Cook for 30-40 minutes. If you're using fresh potatoes, stir every 15 minutes to keep the sauce distributed well. If you're using canned, let it be, so they don't turn into mush.

Instant Pot Risotto

Almost as good as stovetop risotto, and ten billion times easier. Makes about eight cups. 

Ingredients

  • 1 medium onion, diced
  • 4 cloves garlic, minced or crushed
  • 1 tsp salt
  • 1 tsp ground sage
  • 3 Tbsp olive oil
  • 4 cups rice, raw
  • 6 cups chicken stock
  • 2 cups dry white wine
  • 1/2 cup butter
  • pepper
  • 1.5 cups grated parmesan cheese

Instructions

  1. Turn IP on sautee, add oil, and sautee the onion, garlic, salt, and sage until onions are soft.

  2. Add rice and butter and cook for five minutes or more, stirring constantly, until rice is mostly opaque and butter is melted.

  3. Press "cancel," add the broth and wine, and stir.

  4. Close the top, close valve, set to high pressure for 9 minutes.

  5. Release the pressure and carefully stir in the parmesan cheese and pepper. Add salt if necessary. 

Beef marinade for fajita bowls

enough for 6-7 lbs of beef

Ingredients

  • 1 cup lime juice
  • 1/3 cup Worcestershire sauce
  • 1/2 cup olive oil
  • 1 head garlic, crushed
  • 2 Tbsp cumin
  • 2 Tbsp chili powder
  • 1 Tbsp paprika
  • 2 tsp hot pepper flakes
  • 1 Tbsp salt
  • 2 tsp pepper
  • 1 bunch cilantro, chopped

Instructions

  1. Mix all ingredients together.

  2. Pour over beef, sliced or unsliced, and marinate several hours. If the meat is sliced, pan fry. If not, cook in a 350 oven, uncovered, for about 40 minutes. I cook the meat in all the marinade and then use the excess as gravy.

How is it Friday already? I guess I spent the week driving, sleeping, and wheezing. And making Halloween costumes, and cooking.  I tried Instacart again and it’s definitely growing on me. My one complaint is that the default tip is 5%. Five percent! That’s just gross. I know you can raise it, and I do, but what the heck, Instacart. Why would you make that seem normal? Shopping is hard work. 

Here’s what we had this week. A couple new recipes and a lot of easy comfort food. 

SATURDAY
BLTs

Show me a person who doesn’t love BLTs and I’ll happily eat his BLT. 

SUNDAY
Chinese pork ribs, vegetable lo mein

The most elaborate meal of the week. Damien marinated some pork ribs in this lovely Chinese sauce. I didn’t get a great pic of the cooked ribs, but here they are, waiting to be cooked. Lovely thick ribs. I’ll get his recipe when he gets back from his run.

Next time, we’ll make this outside on the grill, but it felt like an oven broiling kind of day.

We’ve been doing a lot of Asian-style meals lately, but are pretty, pretty tired of rice, so I poked around a bit and it turns out a simple lo mein (which means “stirred noodles”) is super easy and delicious.

I made an absolute bare bones sauce with soy sauce, sesame oil, and sugar, boiled some noodles, cooked the veg, deglazed with mirin, and added the noodles and sauce, and that’s it. 

It was perfect, just like good take-out. I used red and yellow bell peppers, red onion, and sugar snap peas, and maybe garlic, I forget. The noodles darkened quite a bit from the sauce as I continued cooking it. Next time I may add some fish sauce or hoisin sauce or oyster sauce or fresh ginger or something, but truly, truly I may not. This was so easy and flavorful and just about the whole family enjoyed it, and what kind of fool would mess with that?

The answer, of course, is my kind of fool. I always mess with things. But at least we’ll have this one happy noodle memory. 

MONDAY
Buffalo chicken on salad

Always popular.

Salad greens, buffalo chicken from frozen, blue cheese, and crunchy onions from a can, with a drizzle of blue cheese dressing. You can addd red onion and shredded carrot and tomato, but you have my permission to not. 

TUESDAY
Bagel, egg, sausage, cheese sandwiches and OJ

Most of the kids want an egg or two fried in plenty of butter and not flipped. I firm up the yolk a little bit by covering the pan for a few minutes toward the end. What kind of egg is that? Sunny side up? It’s even better if you use tons of butter and spoon the hot butter over the yolk as it cooks, but it felt like too much work. Then I went and overcooked mine anyway, oh well.

I had mine with a little hot sauce, and I chose American cheese, because I like American cheese.

WEDNESDAY
Nachos

Basic basic. Tortilla chips, seasoned ground beef, and shredded cheese. One pan with jalapeños, one without.  I also heated up a can of refried beans and a bag of frozen corn, and they were surprisingly popular. I sprinkled a little chili lime powder on top; olé.

We also had salsa and the small amount of sour cream that didn’t get frozen. If anyone knows a use for frozen sour cream, I’d be glad to know it. You can thaw it out, but it gets all grainy and horrible. And here I made an entirely gratuitous joke about people who have been in academia too long, but I took it out because fratelli tutti or whatever. Again I say to you, olé.

THURSDAY
Bacon tomato bisque, challah

I put this one effortful meal on the menu and kept putting it off until there was only one day left to make it, and of course the weather turned warm and muggy. Oh well! It’s a wonderful, hearty soup, even with canned tomatoes.

I thought it would be pleasant to try a round challah instead of my usual big braid-little braid stacked loaf.

It looked pretty, but I guess it needs more baking time, because it was still quite damp on the inside. And you can see I let it rise too much for the second rising, and it got kind of blurry, instead of being the plump, pull-apart rosette I was imagining.

Still, hot eggy bread, mmmm. I did alter the recipe a tiny bit by adding an extra half teaspoon of salt and using olive oil instead of canola oil, and that helped the flavor a lot.

With these challahs I finally got through my entire 25-pound pandemic bag of flour, and now I just have my second 25-pound pandemic bag of flour to use. I know some of you go through that amount of flour every other week, but I do not. I love baking about as much as I love paper machéing: I do it if because there is a still, small voice inside me insisting that this is the only way my family will know I love them, even though my actual family with the big, loud voice is begging me to just buy the thing at the store. I yam what I yam.

FRIDAY
French onion soup, roast mushrooms, baguettes, and tuna

Ooh, looks like I never made a recipe card for my very simple french onion soup. Here’s a photo of onion soup past, and here’s the card:

I’m going to try my hardest to make only a small pot of soup. We still have lots of other soup left over from yesterday, and the refrigerator situation is a travesty, just a travesty. (And yes, this is why the sour cream keeps getting frozen. It’s horribly crowded in there, and refrigerator needs proper air circulation. Well, we all have needs, so GET IN LINE, FRIGIDAIRE.) 

I think Damien is going to make the roast mushroom dish. We haven’t had it in ages and it’s sooooo savory and yummy. It’s one of Burneko’s Deadspin recipes. Dishes with capers in them can go either way, but this one is absolutely smashing. 

And there will be some tuna for the people who are gonna cry about capers.

 

basic lo mein

Ingredients

for the sauce

  • 1 cup soy sauce
  • 5 tsp sesame oil
  • 5 tsp sugar

for the rest

  • 32 oz uncooked noodles
  • sesame oil for cooking
  • add-ins (vegetables sliced thin or chopped small, shrimp, chicken, etc.)
  • 2/3 cup rice vinegar (or mirin, which will make it sweeter)

Instructions

  1. Mix together the sauce ingredients and set aside.

  2. Boil the noodles until slightly underdone. Drain and set aside.

  3. Heat up a pan, add some sesame oil for cooking, and quickly cook your vegetables or whatever add-ins you have chosen.

  4. Add the mirin to the pan and deglaze it.

  5. Add the cooked noodles in, and stir to combine. Add the sauce and stir to combine.

Tomato bisque with bacon

Calories 6 kcal

Ingredients

  • 1 lb bacon (peppered bacon is good)
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 56 oz can of whole tomatoes
  • 2 bay leaves
  • 46 oz tomato juice
  • 8 oz cream cheese
  • 2 sprigs fresh rosemary
  • salt and pepper
  • crispy fried onions (optional garnish)

Instructions

  1. Fry the bacon until crisp. Remove from pan, chop it up, and drain out all but a a few teaspoons of grease.

  2. Add the diced onion and minced garlic to the grease and sauté until soft.

  3. Add tomatoes (including juices), bay leaves, rosemary, and tomato juice, and simmer for 20 minutes. Save some rosemary for a garnish if you like.

  4. With a slotted spoon, fish out the bay leaf, the tomatoes, and most of the rosemary, leaving some rosemary leaves in. Discard most of the rosemary and bay leaf. Put the rest of the rosemary and the tomatoes in a food processor with the 8 oz of cream cheese until it's as smooth as you want it.

  5. Return pureed tomato mixture to pot. Salt and pepper to taste.

  6. Heat through. Add chopped bacon right before serving, or add to individual servings; and top with crispy fried onions if you like. Garnish with more rosemary if you're a fancy man. 

 

Challah (braided bread)

Ingredients

  • 1.5 cups warm water
  • 1/2 cup oil (preferably olive oil)
  • 2 eggs
  • 6-8 cups flour
  • 1/4 cup sugar
  • 2 tsp salt
  • 1.5 tsp yeast
  • 2 egg yolks for egg wash
  • poppy seeds or "everything bagel" topping (optional)
  • corn meal (or flour) for pan, to keep loaf from sticking

Instructions

  1. In a small bowl, dissolve a bit of the sugar into the water, and sprinkle the yeast over it. Stir gently, and let sit for five minutes or more, until it foams.

  2. In the bowl of standing mixer, put the flour (starting with six cups), salt, remaining sugar, oil, and eggs, mix slightly, then add the yeast liquid. Mix with dough hook until the dough doesn't stick to the sides of the bowl, adding flour as needed. It's good if it has a slightly scaly appearance on the outside.

  3. (If you're kneading by hand, knead until it feels soft and giving. It will take quite a lot of kneading!)

  4. Put the dough in a greased bowl and lightly cover with a damp cloth or plastic wrap. Let it rise in a warm place for at least an hour, until it's double in size.

  5. Grease a large baking sheet and sprinkle it with flour or corn meal. Divide the dough into four equal pieces. Roll three into "snakes" and make a large braid, pinching the ends to keep them together. Divide the fourth piece into three and make a smaller braid, and lay this over the larger braid. Lay the braided loaf on the pan.

  6. Cover again and let rise again for at least an hour. Preheat the oven to 350.

  7. Before baking, make an egg wash out of egg yolks and a little water. Brush the egg wash all over the loaf, and sprinkle with poppy seeds or "everything" topping.

  8. Bake 25 minutes or more until the loaf is a deep golden color.

Simple French onion soup

Serve with a piece of toasted baguette at the bottom of each bowl. Finish with cheese on top.

Ingredients

  • 4 Tbsp butter
  • 4 cups onion, thinly sliced
  • 1 Tbsp flour
  • 1 tsp white sugar
  • 4-6 cups beef broth (can also use chicken broth or a combination of water and white wine)
  • pepper
  • parmesan or mozzarella cheese

Instructions

  1. In a heavy pot, melt the butter and then add the onions. Cook very slowly over a low heat for about an hour, stirring occasionally, until the onions are very soft and somewhat darkened.

  2. Stir in the sugar until dissolved. Stir in the flour and mix to coat.

  3. Add the broth (or water and wine). Add pepper to taste and simmer for at least 30 minutes, preferably longer.

  4. Serve with a hunk of toasted bread in the bottom of each bowl. Sprinkle cheese on top, and if you have oven-safe dishes, brown under the broiler to form a skin on top of the soup.

Burgers and chips, broccoli and dip

I think Damien made this. You’ll notice, that was kind of a theme this week. 

SUNDAY
Pizza

Damien made the pizza while I was gardening or something. I recall coming in all huffing and puffing and covered with dirt, and there was this wonderful pizza coming out of the oven just melting with onions, sliced garlic, and feta. Here is an unfiltered photo of this psychedelic pizza, transmitted, as the name implies, directly from my psyche:

MONDAY
Cuban sandwiches, chips, fruit salad

A Cuban sandwich has mustard, pork, ham, pickles, and Swiss cheese, and then it’s grilled and pressed. It’s supposed to be made with Cuban bread, which I have never even seen, but you can substitute something crisp but not crusty on the outside, and soft on the inside. The bread aisles are still pretty skimpy around here, so I ended up with ciabatta rolls. By the time I got twelve sandwiches assembled, I was seized with a deep, unassailable urge not to grill and press twelve sandwiches. 

So I laid them all in a pan, poured tons of melted butter over the top, and baked them. I made a halfhearted attempt to squash them at some point, but that bread wasn’t up for being squashed much.

As you can see, the filling wasn’t all melded and compressed like they’re supposed to be. Guess what, they were delicious. Every once in a while, I have to remind myself I don’t actually believe in authentic and inauthentic food. I believe in food that either tastes good or it doesn’t, the end. 

The fruit salad was pretty, too, so there.

Oh, Damien made the pork with some kind of crusted herbs outside. I honestly think he just baked it, but I’m not sure. 

TUESDAY
Tacos and guacamole and margaritas

Tuesday was Taco Tuesday and Cinqo de Whathave you. But I thought it was Wednesday. So I made some pita bread dough and marinade for pork gyros before I discovered it was Tuesday. Undaunted, I put the dough and marinade in the fridge and intrepidly asked Clara to make some guacamole and asked Damien to make some taco meat.

Tuesday was the day I realized if we were going to start seedlings inside, it needed to be now, so Benny, Corrie, and I got to work.

My original plan was to put the pots outside during the warm days, and then bring them in during the chilly nights, and to do this, uh, every day until Memorial Day, when it will be warm enough to put them in the ground. Even as I was forming this idea, I knew it was terrible and unworkable, especially since the back door is blocked by two large rolls of linoleum waiting for their time to come, and any twice-daily moving in and out of thirty little pots would surely involve showers of dirt and all kinds of rage and frustration, which doesn’t mesh at all with my tender fantasies of children experiencing the wonder of germination in the sweet, sweet springtime.

I mulled over various stupid plans and ended up installing two nursery shelves over a heating vent in front of two of the dining room windows, and now we have a whole new thing to bump our heads on! And we can still have showers of dirt. If you want to have a good laugh about people who get too many babies started even though they don’t have space or a workable plan, go right ahead. I did.  

Damien knew on Monday that it was Monday, so he made some simple syrup, and on Tuesday, which he knew was Tuesday, he made some wonderful margaritas. ¡Salud!

We use Lunazul Blanco Tequila, which is cheap and fine and has a wolf on the bottle. Damien’s margarita recipe:

WEDNESDAY
Pork gryos with yogurt sauce and homemade pita

You’d think that, since I already had the dough and marinade made, this meal would just come together, zoop-zoop-zoop, as my mother used to say. It did not. It was totally worth it, but man, it was a lot of work. 

Here’s the recipe I used. Last time I made this pita bread, it puffed up like magic in the oven. This time, very little puffing occurred. I think I let the dough rise too much before I got around to baking it. It was still fantastic — so much nicer than stiff old store bought pita. I did the oven version, because I was making 32 pitas, and I only managed to get four in the oven at a time. They only take about three minutes to bake per batch, though. 

With twelve people home, an adequate amount of fries pretty much takes up the whole oven, so I decided to cook the pork on the stovetop so we didn’t end up eating at midnight. The meat is better broiled or, even better, cooked outside over the coals; but it was still delicious and tender. While th was cooking, I mixed up a bunch of garlicky yogurt sauce and had the kids cut up tomatoes and cucumbers. 

I like my gyros with just meat and yogurt sauce and hot sauce in the pita, with the veggies and fries on the side. 

Gosh it was delicious. Man, this is a good meal. 

THURSDAY
Chicken cutlets with basil and provolone

Thursday was Moe’s birthday, and this was his requested meal, heartily approved by the whole family. A Burneko recipe from Deadspin: pounded chicken breast breaded with panko crumbs and fried in olive oil, topped with fresh basil and a slice of provolone, and then smothered with a scoop of homemade tomato sauce.

It really tasted this dramatic, too. The sweet sauce, the tender chicken in crisp breading, the melty cheese, and the tender little basil hiding inside, so nice.

This is a fantastically delicious meal (which Damien doesn’t mind making every so often, even though it’s tons of work). Everyone just goes crazy and eats twice what they normally do. 

FRIDAY
Spaghetti

For reasons, Moe and his girlfriend are having this same dish again tonight, in the back yard, six feet apart, and there’s a birthday cake in the oven right now. At some point in the day, I hope to make it resemble Audrey II, because that will be nice. I have slivered almonds for the teeth, but that’s as far as I’ve planned. We shall see. 

Oh, and my friend Leeandra suggests the following modifications to make boxed cake mix much better: Add an extra egg, use melted butter instead of oil, and use milk instead of water. Again, we shall see! 

The rest of us are having spaghetti, inside, a foot and a half apart, with leftover sauce. 

Oh, Clara’s also making Hobbit bread! This is a braided loaf stuffed with cheese and sautéed onions and mushrooms, which Moe also requested for his birthday.

White Lady From NH's Guacamole

Ingredients

  • 4 avocados
  • 1 medium tomato, diced
  • 1 medium jalapeno, minced
  • 1/2 cup cilantro, chopped roughly
  • 1 Tbsp minced garlic
  • 2 limes juiced
  • 1 tsp chili powder
  • salt and pepper
  • 1/2 red onion, diced

Instructions

  1. Peel avocados. Mash two and dice two. 

  2. Mix together with rest of ingredients and add seasonings.

  3. Cover tightly, as it becomes discolored quickly. 

 

Marinade for pork gyros

Marinate thinly-sliced meat for several hours, then grill over the coals or broil in the oven. Serve wrapped up in pita with cucumbers, tomatoes, french fries, hot sauce, and yogurt sauce. This marinade is enough for about five pounds of meat. 

Ingredients

  • 4 medium tomatoes diced and smashed a bit
  • 2 onions grated
  • 2 Tbsp oregano (or a large handful of fresh oregano, chopped)
  • 1/2 cup olive oil
  • 3/4 cup lemon juice
  • 2 Tbsp paprika
  • 12 cloves garlic, crushed or minced
  • kosher salt and pepper

Yogurt sauce

Ingredients

  • 32 oz full fat Greek yogurt
  • 5 cloves garlic, crushed
  • 1/4 cup lemon juice
  • 3 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • fresh parsley or dill, chopped (optional)

Instructions

  1. Mix all ingredients together. Use for spreading on grilled meats, dipping pita or vegetables, etc. 

Damien's margaritas

Ingredients

  • 1 cup sugar for simple syrup
  • sugar for glasses
  • kosher salt or sea salt for glasses
  • white tequila (we like Lunazul Blanco)
  • triple sec
  • lime juice

Instructions

  1. First make the simple syrup, and allow time for it to cool.

    Combine the sugar with a cup of water in a small pot and simmer, stirring, until it is clear. Let cool. Damien puts it in a mason jar and refrigerates it.

  2. Prepare the glasses. Mix sea salt or kosher salt and sugar in a saucer and add a little lime juice to wet it. Rub a lime wedge along the edge of the glass and roll it in the salt and sugar mix.

  3. To make the margaritas, put some ice cubes in a cocktail shaker or mason jar. Add three parts tequila, two parts lime juice, one part Triple Sec, one part simple syrup. Shake until the lid gets cold. Pour the liquid into prepared glasses.

SATURDAY
Brats, chips, strawberries

Damien boils the brats in beer and onions, then browns them up with more onions. Some of the kids eat theirs with still further, raw onions, but I feel that is too many onions. 

SUNDAY
Braised Pork All’arrabbiata, garlic parmesan mashed potatoes, salad, grapes

Someone mentioned this recipe on Twitter, and I happened to have two hunks of panic pork picnic in the fridge, aging rapidly. So I hacked it up and cooked it, and MAN IT WAS GOOD. 

You brown the hunks of pork with salt and pepper, then cook up some onions, tomato paste, garlic, red pepper flakes, red wine, and diced tomatoes on the stovetop, then put it all in the oven for a few hours until the pork is tender.

This is one of those recipes where you could really subsist on the smell alone. Fabulous. Nice and easy, too, and cheap if you can get pork cheap. The red pepper gives it a little dazzle up front, but it’s not super spicy, just very rich and warming. Of course you could adjust it to make it hotter.

I went with parmesan garlic mashed potatoes, which I somehow have never made before. They were a big hit. I put smashed garlic cloves right in with the water to boil the potatoes, and then mashed them along.

Check it out: I says to myself, I say, HOW WOULD IT BE if we were to put a layer of pork all’arrabbiata in a casserole dish, sprrrrread some garlic parmesan mashed potatoes on that, sprinkle it with a bit more cheese, and slide the whole thing into a medium oven to think about what’s it’s done until the top is nicely browned? I think it would be wonderful. 

I know people use pork arrabbiata as a sauce for pasta, but that just doesn’t appeal to me. I think it would be great with egg noodles, though. Or on toast!

MONDAY
Asian meatballs, rice, steamed broccoli

I just love these tasty little meatballs. I had plenty of scallions and fresh garlic, which I chopped pretty coarsely, and I added some extra soy sauce. The only other ingredients are crushed Ritz crackers, kosher salt, and pepper. And ground beef, yes. 

An easy, quick meal that just about everyone likes. I make a nice little dipping sauce, half soy sauce and half mirin, to give it a little extra zing. Damien prefers his with sriracha. These are flavorful enough that you could use ground turkey, if you really needed to, what with the war on and all, and they would still be good. 

We had it with white rice and some broccoli which I’ll call “steamed,” but it was really drowned. I am not used to cooking frozen veg!

TUESDAY
Chicken quesadillas

I actually skipped the chicken for mine and just had cheddar and jalapeños. Not my finest frying effort; whatcha gonna do. 

I made the chicken by sprinkling it lavishly with chili lime powder and cooking it very slowly in oil, then slicing it up. I know I bought tortilla chips at some point, but they had disappeared off the face of the earth. I said I would slice up some sweet peppers, but I did not. 

WEDNESDAY
Omelettes and challah

I offered the choice of sausage, pepper jack cheese, or both. Then someone leaked the news that we also had cheddar, and there was a panic. I guess there has to be a panic about something. 

The challah turned out great!

I made a double recipe, enough for two huge loaves, and my poor old mixer is getting so old and wobbly, I was afraid I would break it, so I pulled the dough out to knead by hand. Man, I am weak. That was exhausting. I eventually gave up long before it reached the required “feels like a boob” stage, cut the dough in half, and threw it back into the mixer a batch at a time, but I still rushed it a bit, and set the dough to rise when it was still pretty knobbly. 

But like I said, it turned out great! I was most pleased.

It looks flat in this picture, but in real life, it was most pneumatic. 

Look at the sheen on that crust. 

I made exactly two nice, tidy omelettes, and the next ten looked like they were the best I could offer with my broken arm (I do not have a broken arm).

THURSDAY
Pizza

Two pepperoni, two olive, one plain. And them’s the facts. I used the leftover sauce Damien made last week. 

FRIDAY

Pasta again, I believe. This pandemic is taking on a distinct canned tomato flavor. 

 

braised pork all'arrabbiata

Ingredients

  • 5-6 lbs pork, cut into 2-inch chunks
  • 4 Tbsp olive oil
  • salt and pepper
  • 3 medium onions, diced
  • 6-8 cloves garlic, minced
  • 4 tsp red pepper flakes
  • 5 Tbsp tomato paste
  • 1 cup red wine
  • 2 28-oz cans diced tomatoes with juice
  • more salt and pepper if needed

Instructions

  1. Preheat the oven to 325.

  2. Salt and pepper the pork chunks. In a heavy pot or dutch oven, heat the olive oil and brown the pork on all sides. Do it in shifts if necessary, to make sure all the pork gets browned.

  3. Remove the pork from the oil and set it aside. Add the diced onions to the oil and cook a few minutes until soft.

  4. Add the minced garlic, tomato paste, and red pepper flakes. Cook, stirring, a few minutes more.

  5. Add the wine and cook, stirring constantly, until the sauce becomes thick.

  6. Add the diced tomatoes with juice and combine with the sauce. Put the pork back in and stir so it's all coated with sauce.

  7. Put a lid on, or cover tightly with tinfoil, and put the pot in the oven for at least two hours, until the pork is very tender and stew-like.

  8. When the pork is done, the sauce should be thick, not liquidy. If necessary, simmer on the stovetop to cook off the excess liquid.

  9. If the pork is very fatty, shove the pork to one side of the pot, let the fat collect on one end, and drain it out with a spoon.

  10. Serve with parmesan mashed potatoes.

 

Garlic parmesan mashed potatoes

Ingredients

  • 5-6 lbs potatoes
  • 8-10 cloves garlic, peeled and smashed
  • 8 Tbsp butter
  • 1-1/2 cups milk
  • 8 oz grated parmesan
  • salt and pepper

Instructions

  1. Peel the potatoes and put them in a pot. Cover the with water. Add a bit of salt and the smashed garlic cloves.

  2. Cover and bring to a boil, then simmer with lid loosely on until the potatoes are tender, about 25 minutes.

  3. Drain the water out of the pot. Add the butter and milk and mash well.

  4. Add the parmesan and salt and pepper to taste and stir until combined.

Vaguely Asian meatballs with dipping sauce

Very simple meatballs with a vaguely Korean flavor. These are mild enough that kids will eat them happily, but if you want to kick up the Korean taste, you can serve them with dipping sauces and pickled vegetables. Serve with rice.

Servings 30 large meatballs

Ingredients

  • 2.5 lbs ground beef
  • 1 sleeve Ritz crackers, crushed finely
  • 1/3 cup soy sauce
  • 1/2 head garlic, minced
  • 1 bunch scallions, chopped (save out a bit for a garnish)
  • 1 tsp kosher salt
  • 1 Tbsp ground white pepper

For dipping sauce:

  • mirin or rice vinegar
  • soy sauce

Instructions

  1. Preheat the oven to 425.

  2. Mix together the meat and all the meatball ingredients with your hands until they are well combined. Form large balls and lay them on a baking pan with a rim.

  3. Bake for about 15 minutes.

  4. Serve over rice with dipping sauce and a sprinkle of scallions.

Challah (braided bread)

Ingredients

  • 1.5 cups warm water
  • 1/2 cup oil (preferably olive oil)
  • 2 eggs
  • 6-8 cups flour
  • 1/4 cup sugar
  • 2 tsp salt
  • 1.5 tsp yeast
  • 2 egg yolks for egg wash
  • poppy seeds or "everything bagel" topping (optional)
  • corn meal (or flour) for pan, to keep loaf from sticking

Instructions

  1. In a small bowl, dissolve a bit of the sugar into the water, and sprinkle the yeast over it. Stir gently, and let sit for five minutes or more, until it foams.

  2. In the bowl of standing mixer, put the flour (starting with six cups), salt, remaining sugar, oil, and eggs, mix slightly, then add the yeast liquid. Mix with dough hook until the dough doesn't stick to the sides of the bowl, adding flour as needed. It's good if it has a slightly scaly appearance on the outside.

  3. (If you're kneading by hand, knead until it feels soft and giving. It will take quite a lot of kneading!)

  4. Put the dough in a greased bowl and lightly cover with a damp cloth or plastic wrap. Let it rise in a warm place for at least an hour, until it's double in size.

  5. Grease a large baking sheet and sprinkle it with flour or corn meal. Divide the dough into four equal pieces. Roll three into "snakes" and make a large braid, pinching the ends to keep them together. Divide the fourth piece into three and make a smaller braid, and lay this over the larger braid. Lay the braided loaf on the pan.

  6. Cover again and let rise again for at least an hour. Preheat the oven to 350.

  7. Before baking, make an egg wash out of egg yolks and a little water. Brush the egg wash all over the loaf, and sprinkle with poppy seeds or "everything" topping.

  8. Bake 25 minutes or more until the loaf is a deep golden color.
