What’s for supper? Vol. 346: Babe, you ok? You barely touched your Earl Gray Preminger Tea Cake

Happy Monday! Don’t worry, it’s Monday, not Friday! I just didn’t get to finish this last week, so I’m doing it now. 

Here’s what we had last week:

SATURDAY
Chicken soup with matzoh balls, challah, Earl Grey Tea Cake 

Saturday we had a little meal for Clara’s birthday: chicken soup with matzoh balls, and challah for dinner. Here’s my challah recipe:

I once again attempted to do a four-strand braid. Last time I followed a video, and that didn’t go well (I cried), so this time I used a pictorial step-by-step guide, and I still cried. I fervently believe that if you took a CAT scan of my brain, there would just be a little missing chunk for the part for what to do when something crosses over something else. That is where everything goes haywire, whether I’m braiding or dancing or installing a light fixture or anything. As soon as one thing crosses over another thing, I just start to cry and I don’t know what to do.

But I’m an adult, and I quickly remembered it’s just bread, so I can just smoosh it together and it doesn’t matter. And I was right! 

The chicken soup was good, if not terribly photogenic.

and the matzoh balls turned out fluffy! I’m going to cling to that little victory, because of what happened with the cake. 

Clara asked for an Earl Gray tea cake, which I have made before using this recipe from this recipe from Liv For Cake, and it was a tremendous pain in the pants. So I looked around for a different recipe, and found one that seemed a little simpler, although it was intended for actual tea cakes — not only made with tea, but cut up into little cakes, glazed, and served with tea. The recipe is from Taste Made, and I made the glaze that goes with it, and also the vanilla bean buttercream frosting from the previous recipe.

So, now, in my defense, at this point, I was making soup, bread, cake, glaze, and frosting all at the same time, and I was about a week into a new migraine medication that quite magically made my headaches much worse and also gave me constant nausea. So when I got to the point where the frosting recipe said to whisk the egg whites and sugar over a double boiler, I was like

so, I whisked the eggs and sugar over the soup. 

and you know what, this did not work great. 

Anyway, I don’t know what the hell else I did wrong, but that cake turned out so dense. It was absolutely GUMMY. It was CLAGGY. It was STODGY. It was all the worst things Prue could say about a cake. 

But, not content with a cake that tasted weird, I thought I would go ahead and decorate it in a horrendous way as well. So I thought, Hey, Clara really used to like that Barbie in The Princess and the Pauper movie with Martin Short as the villain Preminger. So I will make a Preminger cake! AS ONE DOES. 

If you’re not familiar, many of these animated Barbie movies are actually worth watching, and some of them have really good voice actors. Here’s the “How Can I Refuse” number:

SUNDAY
Grilled ham and cheese, pickles, chips

Sunday I still hadn’t done my shopping, but was undeniably felled with not-Covid-but-some-fwiggin-thing, and decided to do Instacart. We had grilled ham and cheese sandwiches on sourdough bread with cute little pickles on the side, and chips. 

Except I had an apple instead of chips, because I looked up the serving size and it was something like seven chips, and that’s just offensive. Might as well have a fwiggin apple. 

MONDAY
Domino’s pizza

Monday I forget what happened, but Damien assessed my general situation and decided that sometimes being the spiritual head of the family means insisting that we order pizza. Bless. 

TUESDAY
Spicy chicken sandwiches with peppers; grapes, cucumbers

Tuesday I pulled some chicken breasts out of the freezer and we had these lovely sandwiches from Sip and Feast that I adore. They’re even better with boneless chicken thighs, but still pretty darn good with breast sliced in half lengthwise. 

Look, if nobody else in your life is willing to say that sometimes American cheese is the best cheese for the job, I’ll say it. I’ll be that person for you. 

I cooked the peppers in the same pan that the chicken had been in

and once the cheese was melted, we piled up them sandwiches.

So it’s a nice soft, sweet brioche buns, BBQ sauce, chicken coated in cajun seasoning and sauteed slowly with American cheese melted on top, some slightly charred shishito peppers, red onion rings, and more BBQ sauce. 

For sides I just served grapes and cucumbers, which is a little weird but whatcha gonna do. 

This sandwich is just excellent. I was afraid I wouldn’t like it as much the second time (you know how sometimes you’re just dazzled by a new recipe, and then you make it again and it turns out you were just having a nice day in general, and that food itself wasn’t that great?), but I DID. It’s yummy and everyone liked it. 

WEDNESDAY
Spicy penne with butternut squash, mozzarella, and spinach; garlic bread

Wednesday I was still feeling extremely punk, but at this point I was mad about being sick, so I decided to . . . show them [shakes fist migrainously at destiny] and try a New York Times recipe.

This is not uhhhh best practice. It was a bad idea. It was an okay recipe, and I’m already familiar with how much work it is to process butternut squash, so I wasn’t taken aback by that as so many of the commenters were; but it was still kind of a lot of work and just didn’t amount to much. I don’t know. I even got the nice fresh mozzarella, and I had fresh spinach and fresh jalapeños and a butternut squash from my garden, and it just tasted kind of meh. 

Oh, here is the recipe, because of course the NYT one is paywalled. And here is a picture of me with my butternut squash. It’s the very first one I picked from my garden, and this is the first year I have grown squash, so I wanted to document it. Turns out it’s kind of hard for a decent Christian lady to take a picture of herself holding a butternut squash in a way that won’t get you in trouble with Tito Edwards.

Anyway the recipe started off well enough, cooking the squash in olive oil with cumin and red pepper flakes.

I prepped the heck out of all the other ingredients, so I could just throw it together when I got home.

I even had enough time to take the leftover challah, slice it up, and make garlic bread

and you know, there’s a reason people don’t do that. It was okay, just not really a texture you necessarily want with garlic bread. 

The whole meal was okay. I kept thinking maybe if the pasta had crumbled sausage in it. I don’t know. I doubt I’ll make it again. It’s now in my head as a bad, sad dish, so I probably won’t go back to it. You may have other results.

On Thursday evening we were talking about apple picking, and how that late spring frost killed off so many apple blossoms, lots of local orchards aren’t even offering PYU apples this year. Our terrible little tree did manage to put out some terrible apples, though, and I realized I was planning to cook pork the next day, so we decided to go ahead and pick the apples that evening.

 

I suppose if I ever did even one single thing to take care of this tree, it might make better apples, but as it is, the dog and the ducks love the miserable little fruits it produces, and we have our annual little ritual of picking apples and searching for the foley mill, so it serves its purpose. I promised the kids I wouldn’t make the applesauce until they got home from school the next day. 

THURSDAY
Roast pork ribs, crabapple sauce, garlic mashed potatoes

The pork ribs were just heavily seasoned with salt and pepper and roasted under a hot broiler, and the mashed potatoes were just mashed potatoes with several cloves of garlic thrown into the water and then mashed along with it, with butter and milk. 

The apples were really especially terrible this year. 

A lot of them were just rotten and had to be thrown out, but I ended up with a few dozen that were misshapen but basically sound

so I just cut them in half and put them in a stock pot with a little water at the bottom, covered it loosely, and set it to simmer. You’re supposed to let it go for a few hours so the apples can really collapse into mush, but I didn’t have enough time, so we ended up kind of violently forcing the mostly-cooked apples through the foley mill

and then I threw in some butter and cinnamon, and tasted it, and decided that hmm, this was a year to add some sugar. 

Some years, our homemade applesauce is a lovely, dusky rose color, and it’s fragrant and cozy and wonderful, with a faint, pleasantly smoky taste that seems to come from this particular tree. Some years it doesn’t need any sweetening, and still has a beautiful nectary flavor. 

This year’s applesauce was yellowish brown and it tasted like paste.

But the kids were delighted anyway, probably because of the little red hen factor, so I didn’t clue them in that it was very bad applesauce indeed. And that’s how you do that! 

FRIDAY
Shrimp and fish lo mein

Friday I was very pleased with myself, because not only did supper turn out really good, but I used lots of leftovers successfully. I made my normal lo mein recipe

starting with fresh ginger and garlic, and then I added some red onions I found in the fridge, then I threw in some shrimp and cut-up pieces of tilapia (I had two filets in the freezer that I didn’t cook a couple of weeks ago); then I chopped up some leftover shishito peppers (I put them in late because they were already cooked, and just needed heating), and then after I added the noodles and sauce, I threw some leftover Italian parsley on top.

Hot damn, it was delicious. 

The shrimp and fish weren’t overcooked and neither were the noodles, the veg were crunchy, the sauce wasn’t too sweet, and the ginger and the garlic were nice and sharp, and the fresh parsley really put it over the top. I was happy to end on a high note, because it’s been kind of a sucky week, and good lo mein is happy food. 

Okay, that’s it! Don’t forget what I told you, about the thing!

(I’m just kidding, I didn’t tell you anything. I don’t know anything. Who wants some applesauce? We have leftover.) 

Challah (braided bread)

Ingredients

  • 1.5 cups warm water
  • 1/2 cup oil (preferably olive oil)
  • 2 eggs
  • 6-8 cups flour
  • 1/4 cup sugar
  • 2 tsp salt
  • 1.5 tsp yeast
  • 2 egg yolks for egg wash
  • poppy seeds or "everything bagel" topping (optional)
  • corn meal (or flour) for pan, to keep loaf from sticking

Instructions

  1. In a small bowl, dissolve a bit of the sugar into the water, and sprinkle the yeast over it. Stir gently, and let sit for five minutes or more, until it foams.

  2. In the bowl of standing mixer, put the flour (starting with six cups), salt, remaining sugar, oil, and eggs, mix slightly, then add the yeast liquid. Mix with dough hook until the dough doesn't stick to the sides of the bowl, adding flour as needed. It's good if it has a slightly scaly appearance on the outside.

  3. (If you're kneading by hand, knead until it feels soft and giving. It will take quite a lot of kneading!)

  4. Put the dough in a greased bowl and lightly cover with a damp cloth or plastic wrap. Let it rise in a warm place for at least an hour, until it's double in size.

  5. Grease a large baking sheet and sprinkle it with flour or corn meal. Divide the dough into four equal pieces. Roll three into "snakes" and make a large braid, pinching the ends to keep them together. Divide the fourth piece into three and make a smaller braid, and lay this over the larger braid. Lay the braided loaf on the pan.

  6. Cover again and let rise again for at least an hour. Preheat the oven to 350.

  7. Before baking, make an egg wash out of egg yolks and a little water. Brush the egg wash all over the loaf, and sprinkle with poppy seeds or "everything" topping.

  8. Bake 25 minutes or more until the loaf is a deep golden color.

 

basic lo mein

Ingredients

for the sauce

  • 1 cup soy sauce
  • 5 tsp sesame oil
  • 5 tsp sugar

for the rest

  • 32 oz uncooked noodles
  • sesame oil for cooking
  • add-ins (vegetables sliced thin or chopped small, shrimp, chicken, etc.)
  • 2/3 cup rice vinegar (or mirin, which will make it sweeter)

Instructions

  1. Mix together the sauce ingredients and set aside.

  2. Boil the noodles until slightly underdone. Drain and set aside.

  3. Heat up a pan, add some sesame oil for cooking, and quickly cook your vegetables or whatever add-ins you have chosen.

  4. Add the mirin to the pan and deglaze it.

  5. Add the cooked noodles in, and stir to combine. Add the sauce and stir to combine.

What’s for supper? Vol. 317: Little Bear food

Happy Friday! Another week of nippy weather, and I’m really settling into cozy fall cooking. I’m doing some planning for Thanksgiving, by which I mean I bought a second potato masher at the thrift store. I have always been a wiggly line potato masher kind of gal, but now I’m branching out into the grid-on-a-circle style, and I have high hopes. Because I just don’t make very good mashed potatoes, and it’s probably the masher’s fault.

However, I am happy to announce that I used up the last of the apples! Very satisfactory. Read on. 

SATURDAY

I’m skeptical Saturday even happened. I have no idea what we ate. 

SUNDAY
Pizza

You may recall how, last time I made pizza, I committed the high crime of not making any just-cheese pizza. Well, this time I did! And the kids made exactly as big a fuss about it as if I hadn’t (“Well SHEESH, Mama, the only reason we’re ASKING is because LAST time . . . “). But I did make a cheese pizza. I really did.  I also made one pepperoni and one olive, fresh garlic, and anchovy. 

Man, I need to do something about that grout. Good pizza, though. 

MONDAY
Pork ribs, applesauce, mashed acorn squash, risotto

APPLE ARMAGEDDON. There were dozens and dozens of soft, spotty, dinged-up apples hanging around the dining room in bags and boxes and government-owned mail cartons driving me mad, so on Monday I gathered them up, hacked them  into quarters, threw them in my biggest pot, added a little water (too much, like I do every year), and let them simmer loosely covered for a few hours. 

I left everything intact, peels, cores, everything, and when they were soft enough to collapse under the weight of a wooden spoon, I ran them through my wonderful food mill, very similar to this one (affiliate link):

 

The food mill is one of the few once-a-year kitchen gadgets I allow to take up space in my tiny kitchen, because nothing else does exactly what a food mill does (i.e. not only smooshes the food, but separates out the undesirable parts). I was a little dismayed to dismayed to discover that someone had put it away last year after using it to make applesauce but not necessarily super duper washing it out, bleh. It has a pot with handle and bowl clips, a crank and blade, and a screw with a sweeping arm for underneath, and [deep shuddery breath] you really do need to take it apart to clean it properly. 

But a little scrubbing did the trick, and I was soon cranking out sweet, beauteous applesauce.

I didn’t take a picture of the refuse because it’s just not pretty, but I’m always impressed at how efficient the food mill is. If you keep cranking, it really gets every last possible scrap of edible material, and just leaves the barest minimum of waste behind. Then you crank it backwards a few turns and it scrapes the leavings up into a little heap for you to whack out into the trash. Very satisfying activity altogether.

After several batches, I was left with a heavy, steaming bowl of fragrant, rosy applesauce, and it smelled so nice, I was tempted to just leave it at that. But I did pitch in a bunch of cinnamon, a generous drizzle of honey, and a lump of butter, and mix it up.

I covered it and left it alone, and it was so dense, it stayed warm until dinnertime. I felt like a fairy tale mother. Everyone was very pleased. 

I served it with pork ribs, just roasted quickly on a rack in a very hot oven with salt and pepper, and some rich, cheesy Instant Pot risotto, and some mashed acorn squash

What an excellent meal. Here is the recipe for Instant Pot risotto, which isn’t quite quite as creamy and luxurious as stovetop risotto, but it’s pretty darn close, and it’s easy enough to throw together on a weeknight, with onions, sage, white wine, and chicken broth.

You can add in any number of things, including squash if you’re not already serving squash. 

But I was, and I was trying a new method. Normally I roast it in the oven and then mash it. This time, I cooked it in the Instant Pot, and I learned a tip to sprinkle it with kosher salt and baking soda first, allegedly to help caramelize it, before mashing it with your add-ins. Here’s the full recipe:

and whoa, it was excellent.

I have no idea if the process really made that much of a difference or if i just got hold of some really tasty squash, but it was amazingly flavorful. Yay! Damien really liked it, so I’ll definitely do it this way from now on. 

TUESDAY
Ima’s Everything Soup and overnight bread

On Monday night, I started some bread dough using an exceedingly vague recipe someone, I’m sorry I can’t remember who, put on Facebook. To wit:

Ingredients
3 cups All Purpose Flour
1 teaspoon active dry yeast
1 teaspoon salt
1 1/2 cups warm water
 
In a large bowl combine flour, active dry yeast and salt. Mix together. Add water, and stir until blended; dough will be sticky. Give it ten good folds. Cover bowl with a tea towel. Let dough rest overnight for 10 to 12 hours at room temp.
 
In the morning, your dough will have grown x2- then give it a few folds (I basically scraped the dough off the sides of the bowl towards the middle), empty it out onto a piece of parchment paper and let it rest for 30 minutes. If dough is sticky and hard to work with, add a bit of flour so it doesn’t stick to your hands. Score your bread with a knife. (I made an “x” on the top.)
 
While dough is resting, preheat oven to 425 degrees F. Put a covered 6- to 8-quart heavy covered pot (Dutch oven, enamel, ceramic) in oven as it heats for about 30 minutes.
 
Carefully remove pot from oven. IT’S VERY HOT. Pick up parchment paper with dough and slide directly into pot (ie dough sitting on the parchment).  Cover with lid and bake 35-40 minutes at 425 Degrees F. LID WILL BE HOT – remove lid and bake another 10-15 minutes, until loaf is golden brown.
 
You can eat it warm with butter or wait until it cools.

Okay, that seemed simple enough!  I tripled the recipe and left it in a big bowl to rise overnight. I ended up using more flour than it called for because it was not just “sticky,” it was like batter, and really couldn’t be called dough. 

The next day, it had risen nicely and was more dough-like, but I did add yet more flour to be able to handle it. I poured it out in two batches onto parchment paper and let it rest 30 minutes as directed. 

I don’t seem to have any dutch ovens (the contents of my kitchen are always vaguely mysterious to me), so I heated up a glass casserole dish and a large iron frying pan, and baked it in two batches in that. You’re supposed to bake it with the lid on, then uncover it and finish baking. Since my containers didn’t have lids, I used tin foil, which stuck to the dough, so when I pulled it off, it peeled some of the bread crust off with it. I could have avoided this by spraying it with cooking spray, or covering it with a bowl or something else with more clearance. 

But overall, it came out of the oven looking like bread!

Quite dense and rather chewy, but real bread, a really good return for the miniscule amount of labor and very basic ingredients I put into it. 

So that was nice. It was pretty good with a little soft butter and a sprinkle of salt, and it hit the spot along with the hearty soup I made.

This seems to be a version of Jim Lahey’s no-knead bread that everybody got all worked up about a while ago. He gives more precise directions and his technique requires more time, but does seem to produce a nicer loaf. So now you know everything I do. 

The soup is an adaptation of my mother’s minestrone soup, which she used to call “everything soup.” Minstrone soup usually has vegetables, greens, beans, tomato, and some kind of pasta or rice. My mother’s version doesn’t have tomato and it does have meat. She used ground beef; I used mild sausage. She used celery; I swapped in zucchini instead. She specified frozen spinach, and I used fresh. I skipped the wine and used fresh parmesan. But otherwise, this is basically her recipe, which is basically minestrone. Or not! It has onions, garlic, carrots, zucchini, chick peas, sausage, spinach, beef broth (and wine) and is topped with a little parmesan.

I cooked it a little too long and it got a little blurry, but it was tremendously nourishing and cozy. This is Little Bear food. 

Together with the world’s most basic bread, it was a very fine little meal for a chilly day. 

And here is where I have to express my admiration for people who cook but don’t enjoy the process. I salute you! I like to eat; goodness knows, I like to eat. But I like to cook almost as much, if not more. The sight and sounds and sensations, the smells and textures and patterns of food being processed are a constant delight to me, even when I’m in a hurry. Peeling and cutting and chopping and grating, rinsing and stirring, steaming and simmering and tossing. Every onion is different inside! Every head of lettuce has its own music when it’s torn. The colors, the colors. It is all absolutely my jam.

What a treat to peer down through the top of a shiny box grater and watch the little torrents of parmesan billowing through the holes as I shred, and then sensing that the grater is stuffed full and needs to be knocked empty against the scarred wooden board, until it spills out its little bounty of delicate curls into the sun.

And then I also like to eat! Lucky me. 

WEDNESDAY
Shawarma

Honest to goodness, I thought it was Thursday, and I was so annoyed at myself for putting off this meal all week, so I was painted into a Thursday corner and had to make a slightly laborious dinner twice in a row, first the soup and bread, then the shawarma. I had been up all night with a cold and fever, struggling with the delusion that I had hidden a terrible, purple secret on top of a mountain and so needed to get my socks off. Then I got up and I was like, OH NO, AND NOW I HAVE TO MAKE SHAWARMA, I HAVE NO CHOICE BECAUSE IT’S THURSDAY. In retrospect, I may still have been a little sick. Luckily, shawarma is actually easy enough that you can make it when you’re a little loopy. 

Boneless, skinless chicken thighs were on sale, and that is the best kind of chicken to use for shawarma, so I didn’t have to do much processing, just trim the fat off a bit. The marinade is easy, and the rest is just really chopping and opening  jars and cans. And crushing plenty of garlic.

So I set several pounds of chicken to marinate in the morning, and made up a big bowl of yogurt sauce

Corrie was home too, so she juiced lemons for me, and also cut up the cucumbers. So we had pita, cucumbers, tomatoes, black and kalamata olives, feta cheese, yogurt sauce, and hummus. I marinated just the chicken and then spread red onions over the top of the chicken before I cooked it. And that was it! Great meal. Everyone loves it. A little bit of work on the front end, but it’s all easy, with no exotic ingredients, and it’s just so tasty. 

Sometimes I make homemade pita or stuffed grape leaves or fried eggplant with this meal, but this is the basic form and it’s great as is. 

THURSDAY
Taco Thursday

Thursday turned out to be Thursday, for whatever reason, and so we had tacos. I don’t make the rules. (Well, I do, but I don’t have to explain myself.) 

FRIDAY
Spaghetti pangrattato

Something new for us. Pasta with lemon, parsley, seasoned breadcrumbs, capers, and bits of fried egg!! from Smitten Kitchen. I think this is one of those delicious, delicious poverty dishes the Italians are so good at. I’m guessing most of the kids will just want plain pasta, but you never know.

Or maybe we’ll just have spaghetti! The kids have the day off for Veteran’s Day and maybe I’ll do the weekend shopping on Friday and have the actual weekend off for once, to do something fun. Although so far all I have managed to do is sleep for twelve hours, which I haven’t done in years, and I think that means I am still sick. 

Oh, I just remembered what we had on Saturday. Corn dogs! Corn dogs and hot pretzels. With a side of mustard. 

Instant Pot Mashed Acorn Squash

Ingredients

  • 1 acorn quashes
  • 1/4 tsp baking soda
  • 1 tsp kosher salt
  • 2 Tbsp butter
  • 2 Tbsp brown sugar
  • 1/2 tsp nutmeg

Instructions

  1. Cut the acorn squashes in half. Sprinkle the baking soda and salt on the cut surfaces.

  2. Put 1/2 a cup of water in the Instant Pot, fit the rack in it, and stack the squash on top. Close the lid, close the valve, and cook on high pressure for 24 minutes. Do quick release.

  3. When squash is cool enough to handle, scoop it out into a bowl, mash it, and add the rest of the ingredients.

Ima's Everything Soup

heavily adapted from a sort-of-minestrone soup my mother used to make

Ingredients

  • 1+ lbs loose mild sausage (my mother used ground beef)
  • olive oil if necessary
  • 1 medium onion, diced
  • 4-5 cloves garlic, crushed
  • 1-1/2 tsp oregano
  • 1 tsp ground pepper
  • 2 large carrots, diced
  • 1 zucchini, diced with the skin on
  • 6-12 cups beef broth
  • 4 cups fresh spinach (frozen is also fine)
  • 1/4 cup red wine (optional)
  • 1 cup small pasta like pastina, raw
  • 1 can chickpeas, drained
  • salt to taste
  • 1/4 cup grated parmesan cheese

Instructions

  1. In a pot, cook the sausage, crumbling, until it's cooked through. Add olive oil if necessary to keep from burning. (If using an Instant Pot, use the sauté function for the first two steps.)

  2. Add in garlic, onion, oregano, and pepper. Cook another several minutes until the onion is soft.

  3. Add in the carrots and zucchini, and pour in the broth (and wine if using), and stir. If cooking on stovetop, cover loosely and let simmer for twenty minutes. (If using an Instant Pot, add all the ingredients except the cheese, close the lid, close the valve, and press "soup.")

  4. Add in the spinach and chickpeas and continue simmering another ten minutes. Add in the pasta ten minutes before serving and cook until soft. If the soup is too thick and too much broth has been absorbed, add another 4-5 cups of broth. Top with parmesan.

 

Instant Pot Risotto

Almost as good as stovetop risotto, and ten billion times easier. Makes about eight cups. 

Ingredients

  • 1 medium onion, diced
  • 4 cloves garlic, minced or crushed
  • 1 tsp salt
  • 1 tsp ground sage
  • 3 Tbsp olive oil
  • 4 cups rice, raw
  • 6 cups chicken stock
  • 2 cups dry white wine
  • 1/2 cup butter
  • pepper
  • 1.5 cups grated parmesan cheese

Instructions

  1. Turn IP on sautee, add oil, and sautee the onion, garlic, salt, and sage until onions are soft.

  2. Add rice and butter and cook for five minutes or more, stirring constantly, until rice is mostly opaque and butter is melted.

  3. Press "cancel," add the broth and wine, and stir.

  4. Close the top, close valve, set to high pressure for 9 minutes.

  5. Release the pressure and carefully stir in the parmesan cheese and pepper. Add salt if necessary. 

Chicken shawarma

Ingredients

  • 8 lbs boned, skinned chicken thighs
  • 4-5 red onions
  • 1.5 cups lemon juice
  • 2 cups olive oil
  • 4 tsp kosher salt
  • 2 Tbs, 2 tsp pepper
  • 2 Tbs, 2 tsp cumin
  • 1 Tbsp red pepper flakes
  • 1 tsp cinnamon
  • 1 entire head garlic, crushed

Instructions

  1. Mix marinade ingredients together, then add chicken. Put in ziplock bag and let marinate several hours or overnight.

  2. Preheat the oven to 425.

  3. Grease a shallow pan. Take the chicken out of the marinade and spread it in a single layer on the pan, and top with the onions (sliced or quartered). Cook for 45 minutes or more. 

  4. Chop up the chicken a bit, if you like, and finish cooking it so it crisps up a bit more.

  5. Serve chicken and onions with pita bread triangles, cucumbers, tomatoes, assorted olives, feta cheese, fresh parsley, pomegranates or grapes, fried eggplant, and yogurt sauce.

 

Yogurt sauce

Ingredients

  • 32 oz full fat Greek yogurt
  • 5 cloves garlic, crushed
  • 1/4 cup lemon juice
  • 3 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • fresh parsley or dill, chopped (optional)

Instructions

  1. Mix all ingredients together. Use for spreading on grilled meats, dipping pita or vegetables, etc.

Sandwiches and fries

Damien brought home some baguettes and and assortment of deli meats and cheese and some jarred peppers and things. Very tasty. Forgot to take a picture.

SUNDAY

Nobody can remember what we had on Sunday. It has been erased from the books, wiped clean from the slate, carved clear of the tablets of history. Probably burgers.

Oh, now I remember: Sunday I was picking up Lena from Granite State Comiccon. She did really well, selling prints, stickers, and masks. I happen to have one of her stickers on my laptop

and these apparently sold very briskly. I’ll let you know when she gets her Etsy store restocked. 

MONDAY
Beef barley soup, pumpkin muffins

Corrie has been begging for beef barley soup and Benny has been begging for pumpkin muffins, so even though it was in the mid 70’s, I caved. The leaves are changing, the ducks are flying south, there’s a fog rolling across the dried grass in the mornings, and people who live within a mile of actual corn fields are paying $7.88 for disinfected stalks of corn from Walmart to attach to their porches with zip ties. Sounds like soup weather to me. 

The beef barley soup turned out very nice, although I forgot to buy mushrooms. I made it on the stovetop, but here is a recipe you can easily make in the Instant Pot if you’d prefer

I also made about 18 pumpkin muffins, and they turned out a little weird. The can of pumpkin I was counting on turned out to be pumpkin pie mix, which already has spices and sugar added to it, plus who knows what else.

Then I didn’t help matters by somehow bobbling the hot pan and dumping every single muffin out onto the oven floor, which is currently foul and horrible. So a bunch of them got charred and a bunch of them picked up miscellaneous oven crap, and they weren’t sweet enough, and they had a weird texture, more like cake than muffins, but somehow not in a good way. 

Corrie has been putting them in her lunch every day, though, so it wasn’t a total loss. Her lunch gets inspected because there is a kid with a nut allergy this year, so either the teacher is impressed that I bake a lot, or the teacher is horrified that I’m sending my kid to school with charred pumpkin lumps, not sure which. 

TUESDAY
Chicken burgers, chips, veggies and dip

A very deluxe meal, as you can see.

I’ve been putting bowls of fruit on the table, to dissuade myself from eating chips. It works, in the sense that I eat fruit with my meal, and then go back after supper and eat everybody’s leftover chips. 

WEDNESDAY
Chicken soup with matzoh balls, challah, Earl Grey cake with vanilla bean frosting

Clara’s birthday! She requested this coziest of meals. I more or less followed my mother’s recipe for chicken soup, and the recipe on the can for matzoh balls. I made the soup the day before, so it could cook all day long and get very rich and golden. Forgot to take a pic of the finished soup, but here it is being made. I used just some legs, plus carrots, celery, onions, dill, and parsley, and lots and lots of simmering time:

I made two big challahs and they turned out pretty nice. It was chumid as chell, which maybe made the loaves a little flabbier than strictly necessary, but they were pretty good. 

The Early Gray tea cake from Liv For Cake was quite a project. I am not much of a baker, and have long since resigned myself to making box cakes for most birthdays. I followed this recipe slavishly, though, and it came out well. Maybe a little dry; I guess I baked it a hair too long. And my oven really needs leveling!

You have to make tea milk and add that to the batter, as well as adding ground tea. You can also make tea syrup to brush over the baked cake, which I ended up not having time for. Very pleasant, cozy, old fashioned flavor, almost citrusy, not too sweet, and the cake has a very fine grain. 

The vanilla bean frosting that goes with it was also a little more labor intensive than I normally attempt, and I will be honest, it didn’t taste that spectacular to me. You cream egg whites and sugar, then whisk them over a double boiler, then put them back in the stand mixer and keep whisking until they are stiff, then add in the butter and vanilla bean paste. The texture is extremely light and has a creamy flavor — like it tastes like there is cream in it — but it also tasted like shortening to me, which was pretty disappointing, since the actual ingredients (unsalted butter, vanilla bean paste) were actually pretty expensive. Maybe I just don’t like buttercream that much. Everyone else liked it, and it was very easy to work with. 

For some reason I got the idea to make a Great Wave off Kanagawa cake.

I guess the sort of frothy buttercream looked wavy. If I had planned ahead, I would have bought some nonpareils for the foam, but I just piped it in with a sandwich bag and a butter knife. I forgot to put the boat in. Anyway, Clara liked it. 

THURSDAY
Pizza

Damien made pizzas. He tried toasting the pepperoni before adding it to the pizza, just to give it a little extra crunch. I didn’t try any, but he said it was good, not spectacular. He also made one cheese, one pepperoni, and one with anchovies, artichoke hearts, and garlic. Guess which one I held out for.

FRIDAY
Penne

The kids requested pasta that is shaped like tubes, in sauce that comes in jars. That I can do.

And now I’m excited, because my Foley mill arrived in the mail!

This is a lovely little machine, very well designed. It clips onto the side of a pot or bowl, and when you turn the crank, the high end of the inside blade catches food underneath it and forces it down through the little holes as it turns, so it crushes it and also sorts out the seeds and skins and whatnot; and at the same time, a little pin turns on the bottom

to keep it clear as you work. Very nice. 

I bought it from eBay, to replace the food mill I threw out at some point last year. I guess I was doing some kind of kitchen purge and thought, “What is this dumb thing taking up space? I can’t use it more than once a year!” Well guess what, stupid? Here we are at the one time of year when I want to make applesauce, and a food mill is really the only thing that works. I like to cook the apples with the skin and cores in, and then strain them out afterward. You can do it with a sieve, but it’s horrible work and takes forever, and a food mill is just fun to use. Our terrible little apple tree also has plenty of terrible apples on it this year. They’re not really good for anything else besides apple sauce, but they have an intriguing smoky flavor that makes very pleasant sauce. The tree’s name is Marvin.

If you’ve never made your own apple sauce, it’s super easy, and a good way to use the million apples your toddler took one bite of and then discarded. Cut them into quarters, leaving on the skins and cores, and put them in a big pot with an inch or two of water on the bottom. Cover loosely and let it simmer for . . . okay, I don’t remember how long. Maybe forty minutes? Long enough that, when you poke the apples, they don’t resist at all, but collapse into mush. (Softer apples, like Macintosh, are best for applesauce, obviously.) Then you dump everything into a food mill (or sieve) and crush out all the skins and cores.

Add however much sugar and cinnamon you like, and a little butter, and stir. That’s it. Best applesauce you’ve ever had, and the smell is heavenly.  Warm, rosy homemade applesauce with a little vanilla ice cream on top will bring tears to your eyes.

You can also trim the cores and peels off first, and then you can just use a blender or whatever to make the apples into sauce, but the flavor and color won’t be nearly as nice. 

And that’s it! Headed out to adoration in a bit. Praying for you all, cheese bags. 

 

Beef barley soup (Instant Pot or stovetop)

Makes about a gallon of lovely soup

Ingredients

  • olive oil
  • 1 medium onion or red onion, diced
  • 1 Tbsp minced garlic
  • 3-4 medium carrots, peeled and diced
  • 2-3 lbs beef, cubed
  • 16 oz mushrooms, trimmed and sliced
  • 6 cups beef bouillon
  • 1 cup merlot or other red wine
  • 29 oz canned diced tomatoes (fire roasted is nice) with juice
  • 1 cup uncooked barley
  • salt and pepper

Instructions

  1. Heat the oil in a heavy pot. If using Instant Pot, choose "saute." Add the minced garlic, diced onion, and diced carrot. Cook, stirring frequently, until the onions and carrots are softened. 


  2. Add the cubes of beef and cook until slightly browned.

  3. Add the canned tomatoes with their juice, the beef broth, and the merlot, plus 3 cups of water. Stir and add the mushrooms and barley. 

  4. If cooking on stovetop, cover loosely and let simmer for several hours. If using Instant Pot, close top, close valve, and set to high pressure for 30 minutes. 

  5. Before serving, add pepper to taste. Salt if necessary. 

 

Pumpkin quick bread or muffins

Makes 2 loaves or 18+ muffins

Ingredients

  • 30 oz canned pumpkin puree
  • 4 eggs
  • 1 cup veg or canola oil
  • 1.5 cups sugar
  • 3.5 cups flour
  • 2 tsp baking soda
  • 1.5 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger
  • oats, wheat germ, turbinado sugar, chopped dates, almonds, raisins, etc. optional

Instructions

  1. Preheat oven to 350. Butter two loaf pans or butter or line 18 muffin tins.

  2. In a large bowl, mix together dry ingredients except for sugar.

  3. In a separate bowl, mix together wet ingredients and sugar. Stir wet mixture into dry mixture and mix just to blend. 

  4. Optional: add toppings or stir-ins of your choice. 

  5. Spoon batter into pans or tins. Bake about 25 minutes for muffins, about 40 minutes for loaves. 

 

Challah (braided bread)

Ingredients

  • 1.5 cups warm water
  • 1/2 cup oil (preferably olive oil)
  • 2 eggs
  • 6-8 cups flour
  • 1/4 cup sugar
  • 2 tsp salt
  • 1.5 tsp yeast
  • 2 egg yolks for egg wash
  • poppy seeds or "everything bagel" topping (optional)
  • corn meal (or flour) for pan, to keep loaf from sticking

Instructions

  1. In a small bowl, dissolve a bit of the sugar into the water, and sprinkle the yeast over it. Stir gently, and let sit for five minutes or more, until it foams.

  2. In the bowl of standing mixer, put the flour (starting with six cups), salt, remaining sugar, oil, and eggs, mix slightly, then add the yeast liquid. Mix with dough hook until the dough doesn't stick to the sides of the bowl, adding flour as needed. It's good if it has a slightly scaly appearance on the outside.

  3. (If you're kneading by hand, knead until it feels soft and giving. It will take quite a lot of kneading!)

  4. Put the dough in a greased bowl and lightly cover with a damp cloth or plastic wrap. Let it rise in a warm place for at least an hour, until it's double in size.

  5. Grease a large baking sheet and sprinkle it with flour or corn meal. Divide the dough into four equal pieces. Roll three into "snakes" and make a large braid, pinching the ends to keep them together. Divide the fourth piece into three and make a smaller braid, and lay this over the larger braid. Lay the braided loaf on the pan.

  6. Cover again and let rise again for at least an hour. Preheat the oven to 350.

  7. Before baking, make an egg wash out of egg yolks and a little water. Brush the egg wash all over the loaf, and sprinkle with poppy seeds or "everything" topping.

  8. Bake 25 minutes or more until the loaf is a deep golden color.

I know I said I was ready to start cooking cold weather food, but this time, I mean it. Come for the honey chili acorn squash, homemade applesauce, and heavenly bacon tomato bisque, stay to feel better about the birthday cake you bought at Safeway. Here’s what we had this week:

SATURDAY
Beer brats with onions, chips

The kids unexpectedly begged for beer brats with onions, and that could be arranged. Damien boiled them in beer and onions and then browned them up in a pan. For me, however, he bought a surprise steak, since I was feeling low. 

It helped!

SUNDAY
Spaghetti and meatballs, garlic bread, chocolate cake

This was a birthday meal for Moe. Moe’s birthday is in May. 

Now, you may think it’s pathetic that we wouldn’t get around to celebrating a May birthday until October, but you are mistaken. That’s not pathetic! THIS CAKE IS PATHETIC! 

You will have to take my word for it that the theme was not “mangled remains of a once-proud city after a nuclear holocaust.” It really wasn’t. He is very into theater, so the theme was “comedy and tragedy,” and I made a comedy and tragedy mask with ribbons, and a bunch of olive leaves.

See, last time we made little garnishes out of melted chocolate, they turned out great.

What’s for supper? Vol. 144: Chocolate garnicht

It was easy, even. I don’t know what the hell happened this time. I guess maybe possibly I was rushing a bit. And also, it’s possible my confidence was a little shaky after the cake I had made last week, for Clara’s birthday. 

Now Clara, if you will recall, already had a huge blowout birthday in August when we went to Hadestown

So I’m not saying I didn’t try to make a good cake, but after a birthday like that, I did feel less pressure to absolutely nail the cake part.

That being said, this was one garbage cake.

I had meant so bake it the night before, but it turns out I bought cake mix that requires egg whites, and we were out of eggs, and the quik-e-mart was closed, and there’s really no substitute for egg whites. So I asked Damien to bake it the next day while I was shopping. I couldn’t find the right pans, so I ended up giving him two round pans and one flower-shaped pans. 

In my head, it would look something like this:

A sort of grim, underworld nod to a wedding cake, topped with a glowing red blossom and dripping with shiny, dark chocolate. EASY ENOUGH, RIGHT?

So I set about fashioning a glowing red blossom out of fruit rolls and toothpicks, as one does. That part was actually not terrible, except that I got tired of feeling sticky, and didn’t make enough petals.

To be fair, this was halfway through. It did end up looking a little better. A little.

Then the cake cracked a bit when it baked. That’s fine, that happens. But then, I decided to put the layers together without leveling them off. Why? Who can say? Maybe I suffered a mental injury while trying to fashion a blossom out of toothpicks and fruit rolls. Of course the unleveled cake cracked even more, and continued to crack, in a way that was no longer fine. So I broke up some wooden skewers so they’d be nice and splintery, and jammed them in to keep the layers together. 

But wait, it gets worse! Let’s talk about the chocolate ganache, which was going to rescue the whole wobbly mess by gracing it with a rich, glossy chocolate coating that dripped decadently down the sides.

I have never once in my life been able to make a chocolate ganache. It’s just beyond my capability. Doesn’t matter what recipe I use, what ingredients I splurge on. It never comes out. I’ve wrecked it so many times, and so consistently and so thoroughly, that we’re way beyond the point that there’s anything remotely admirable about trying again. There is a section in the DSM about people who still try to make a chocolate ganache with my ganache history. So naturally, that is what I tried.

You’ll never guess. It didn’t turn out.

It was grainy and soupy and bad. I slopped it on the cake anyway, hoping that a last-minute birthday miracle would make it magically coalesce into something edible. That did not come about. It did not come about, even though I helped it along by dumping a lot of gold sugar into the crack in an effort to make it look symbolic!

So.  That was what I had in my arsenal of cake confidence while approaching this other cake. Yeah, remember the other cake?

I didn’t mean for it to look like a photo you show to a cricket when threatening him about what you could do to his family if he doesn’t spill what he knows. I didn’t mean for it to be straight out of the “this is why you never go to sleep with a cell phone charging under your pillow. Poor Madyson now has a plastic bag where her jaw once was, and she wants you to look at this picture and think hard about your choices” file. It just turned out that way, all by itself.  

The good news is, there are no birthdays in November. 

MONDAY
Buffalo chicken salad

This actually tasted far better than it looks.  And yes, that is a sheet in the background. I was eating salad in bed. 

I wanted to make something like the salad I had at Wendy’s. I love Wendy’s salads. They are fresh and delicious, and let’s face it, sometimes you get a little surprise, especially if Pilar is working that day. 

I bought two bags of breaded chicken strips, one regular and one buffalo. I cooked those and cut them up and served them along with mixed greens and shredded pepper jack cheese, with buffalo ranch dressing and some of those crunchy fried onion things people put on that gross Thanksgiving string bean casserole. I thought it was very good! And of course extremely easy. The cheese didn’t really hit the spot, and I did mean to get tomatoes. I think maybe blue cheese next time. But there will be a next time for this salad.

TUESDAY
Pork ribs with applesauce, mashed squash, mashed potatoes

It’s edible squash season, motherfuckers.

I had the kids pick all the terrible apples they could reach from our terrible apple tree, Marvin.  We don’t do anything at all to take care of this tree, and the apples aren’t great for eating, but most of them are just a little spotty and weird, so fine for cooking. 

Well, some of them are terrifying. 

Doesn’t it look like it wished it could scream? This one didn’t go into the pot.

We also had an awful lot of bruised, dinged, maltreated apples left over from apple picking. 

I cut out all the bad spots, quartered them, and chucked them, peels and cores and all, into a big pot with a few inches of water, and set it to simmer with a loose lid. A few hours later, the apples were mushy and collapsed, and the kitchen smelled heavenly, and I suddenly remembered I had gotten rid of my food mill. So I was reduced to shoving the cooked apples through a strainer to get the peels, cores, and seeds out. Bah.

 I still stand by leaving the peels on when you cook the apples, for color and flavor, but if you don’t have a food mill, be smart and core them before cooking. Bah. What a stupid week. Anyway, I put the strained applesauce back into the pot and added a hunk of butter, some cinnamon, and some honey and let it cook down a little bit more. SO GOOD. There is nothing like warm, homemade applesauce.

I had two acorn squashes. I cut them in half and scooped them out, then put them in a pan in a 400 oven for about an hour, until the flesh was soft. Look how October it is:

Then I scooped it out, mashed it a bit, and added butter, honey, a little salt, and chili powder. I figured I was the only one who would eat it anyway.

I thought it was delicious! And yes, I was the only one who ate it. 

The pork ribs, I just sprinkled generously with salt and pepper on all side and put them in a 450 oven for about 25 minutes, turning once. This is the best way to make pork ribs. Fight me.

WEDNESDAY
Meatball pizza

Aw yisss, leftover meatballs! I did not take a picture. Too busy eating meatball pizza.  

THURSDAY
Bacon tomato bisque, grilled cheese

This really is the soup of all soups. It takes even less skill than some soups, but it tastes both delicious and fancy. It is absolutely packed with flavor. I tweaked it a bit after last time I shared the recipe card (below). Bacon, garlic, onion, rosemary, tomato, and so creamy and rich. 

I also sprinkled the top of mine with some of those crunchy onion things we had left, and that was an excellent choice. 

I made a bunch of grilled cheese sandwiches with sourdough bread and American cheese, because dammit, I like American cheese. It melts good. I cooked them in the pan that the bacon, onions, and garlic had been cooked in. 

FRIDAY
I don’t know. I think I wrote spaghetti.

Tomato bisque with bacon

Calories 6 kcal

Ingredients

  • 1 lb bacon (peppered bacon is good)
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 56 oz can of whole tomatoes
  • 2 bay leaves
  • 46 oz tomato juice
  • 8 oz cream cheese
  • 2 sprigs fresh rosemary
  • salt and pepper
  • crispy fried onions (optional garnish)

Instructions

  1. Fry the bacon until crisp. Remove from pan, chop it up, and drain out all but a a few teaspoons of grease.

  2. Add the diced onion and minced garlic to the grease and sauté until soft.

  3. Add tomatoes (including juices), bay leaves, rosemary, and tomato juice, and simmer for 20 minutes. Save some rosemary for a garnish if you like.

  4. With a slotted spoon, fish out the bay leaf, the tomatoes, and most of the rosemary, leaving some rosemary leaves in. Discard most of the rosemary and bay leaf. Put the rest of the rosemary and the tomatoes in a food processor with the 8 oz of cream cheese until it's as smooth as you want it.

  5. Return pureed tomato mixture to pot. Salt and pepper to taste.

  6. Heat through. Add chopped bacon right before serving, or add to individual servings; and top with crispy fried onions if you like. Garnish with more rosemary if you're a fancy man.
