Area Woman Pinning An Awful Lot On That One Run

Area woman Simcha Fisher rebounded from her Christmas and New Year’s slump with a brisk one-mile run this week.

“It’s so good to get moving again,” Fisher said, toweling off her neck with a mitten. “Whew, it’s been too long!” Fisher didn’t say so out loud, but she privately believed her hips had actually already gotten a little bit smaller even in that one run, probably because the fat was just temporary silly holiday fat, and not actual regular fat.

All through December, Fisher had allowed countless phalanxes of cookies and cake, various smoked meats and soft cheeses, sugared nuts, candied fruit, and cream-filled alcoholic beverages to parade down her gullet like a conquering army marching down the streets of an occupied city. But she did go for that one run, and is going to run some more at some point soon, so.

“It’s actually a huge relief to be back in the routine of working out again,” Fisher continued, mentally scoffing at her former bad habits that may have crept up a bit over the course of the last few weeks, during which her only physical activities were cooking, baking, shopping for more food, and cutting mammoth wedges off panettone sweet bread, which is just bread, and not really cake.

Fisher slenderly untied her virtuous running shoes, saying, “I’m going to take tomorrow off and then bump it up to two miles the next day.” She laughed quietly to herself as her abdomen bulged over the waist of her leggings.

“That belly doesn’t even bother me, because I know I’m already working on it,” she said. “I even started running again!” She then rolled her eyes derisively some of those poor suckers who were just starting out at the gym this year, and who were actually fat, instead of just temporarily silly fat.

Fisher than sat on a stool and ate some quick granola, just a little bit to keep the energy up, and then, ooh, there is some of that smoked gouda left, while making her schedule for the coming week. She noted that January was going to be really busy, and it would be hard to find time to get to the gym.

“Well, I’ll fit it in when I can,” she said. “It just feels so good to be active again.”

Actually, that run was last week.

What’s for supper? Vol. 113: Just pretty much all the food. All of it.

First a prayer request: My father is in the hospital, waiting for heart surgery. He’ll have a triple bypass, or possibly a quadruple bypass, on Tuesday. We’re very glad this surgery is available, and have high hopes he’ll start feeling better than he has in a long time once he’s recovered; but of course the recovery is long and hard, especially since he is 75 and has other medical issues. He lives alone, close to where my mother’s nursing home, but an hour or more away from all his children, so the logistics are a little daunting.

And now the food! We ate so much ridiculously good food this past week:

SATURDAY

Gosh, this seems like so long ago. Saturday we went ice skating and came home to have hot chocolate, popcorn, and grilled ham and cheese. Corrie was very very enthusiastic about skating and won all the races.

I did a lot of skating with Benny, until the moment came when I leaned too hard on the skating frame and it collapsed. Le sigh.

SUNDAY
New Year’s Eve. We pretty much ate all the food that is available to the known universe. 

Some friends sent a huge, spectacular hamper packed with luxurious treats, so we hauled out all the various tea sets you accumulate when you have eight daughters, and had a sort of rolling English tea party. Tragically, I forgot to take pictures of my own, but you must take my word for it that it was fancy beyond all reason:

If you don’t have extraordinarily generous friends who send you luxury hampers, I recommend getting some right away.

While everyone continued feasting and being fancy, my husband casually strolled into the kitchen to prepare, you know, a little sauteed scallops topped with shredded duck and Hollandaise sauce.This photo miserably fails to capture how rich and sumptuous this dish is.

If you don’t have a husband who likes to casually stroll into the kitchen and make your dreams come true, I recommend getting one right away.

This dish is not an obvious combination of flavors, but it makes so much sense once you’re shoveling it into your mouth.I thought duck would be more or less like dark turkey meat, but it’s really almost closer to lamb. So good. A wonderful meal for a special treat. (Aldi has both duck and scallops on sale every so often!)

And now the sushi! Yes, we had a sushi party on the same day as our English tea and our duckstravaganza. It made sense at the time.

First, I bought good rice and several packages of nori, soy sauce, rice vinegar, wasabi, pickled ginger, a little jar of roe, tuna steaks that were frozen at sea, some seared and seasoned tuna, canned salmon for the sissies, fake crab legs, toasted sesame seeds, avocados, mangos, carrots, cucumbers, and chop sticks, which we forgot to use.

I bought a sack of Nishiki rice, which is just gorgeous, like mother of pearl. It is expensive, but definitely worth it for a treat. I used the sushi rice recipe in this post (after skimming, with growing horror, through numerous other recipes that discussed whether it was more auspicious to rinse the rice 54 or 128 times before cooking), except I didn’t use quite that much salt. I cooked six cups of raw rice in the Instant Pot, which makes good sticky rice.

While the rice was cooking, I peeled the carrots into strips and pickled them, and we stirred some hot sauce into some mayo, and sliced the tuna as thin as I could, and the kids helped prep the avocados, mangoes, and cucumbers. It was all so lovely.

Now that I have ramekins, I use them all the time. Ramekins!

When the rice was done, I carefully sprinkled the vinegar mixture over it (I sextupled the recipe, but didn’t need that much) and then Benny’s moment of glory came: She used her special gold lace fan to vigorously fan the rice while I carefully turned it:

I guess you fan it to evaporate the vinegar, so the rice takes on the flavor without getting mushy. It worked!

We couldn’t find the rolling mat, so we opted for sushi cones, where you break a panel of nori in half, set the rice and fillings on one side, and roll it up diagonally. It took a while to get the hang of it, and they were not dainty, but on the other hand, NOM NOM NOM NOM NOM.

We kept the rice covered while everyone took turns building their sushi cones.  A few variations:

It was fantastic. Just about everyone found some combination to their liking. Some of the kids skipped the nori altogether, and made deconstructed sushi; some of them just used rice and vegetables; some of them (okay, me) just parked themselves in front of the tray and systematically worked through eleven different combinations.

We’re doing this every New Year’s Eve from now on. What ingredients would you add?

MONDAY
Birthday! Baby New Year turned twelve and requested calzones. 

To make twelve calzones, I used three balls pizza dough divided into fourths, then made the cheese filling (this was more than enough):

32 oz ricotta
3-4 cups shredded mozzarella
3/4 cup parmesan
1 Tbs garlic powder
2 tsp oregano

1 tsp salt

I stretched the dough portions into the size of small plates, then added a ball of cheese mixture, plus whatever fillings were requested. I folded the dough over and pinched the ends tightly shut, then pressed the calzone to spread out the filling evenly.

We greased two baking trays with shortening and sprinkled them with corn meal, laid the calzones on (with a few inches in between, as they puff up), and brushed the with egg yolk beaten with a little water.

I baked them at 450 for — okay, I don’t remember how long. Maybe 15 minutes?

 

Then we served them with ramekins (ramekins!) of hot marinara sauce for dipping.

We made this one-bowl chocolate cake recipe. I didn’t taste it, as chocolate is a huge migraine trigger, but it looked pretty good. Decorations courtesy of the 90% off shelf after Halloween. I’m a saver.

We made chocolate frosting with a recipe on the side of the cocoa powder can. I think it was just shortening (we had run out of butter!), chocolate, and powdered sugar.

My son took a few pictures of his sister blowing out her candles, and then Google helpfully and spontaneously merged them into this horrifying glimpse into the spirit realm of birthdays:

I don’t want to know what that creature wished for.

TUESDAY
Chicken enchiladas and beans and rice

One of the college girls offered to make chicken enchiladas before she flies away again. They were so good. She used boneless chicken thighs with Pioneer Woman’s recipe,   and made thirty nice enchilada longbois, some red and some green.

I made some quickie beans and rice. Cooked up a few cups of rice and added a can of black beans and a can of chili kidney beans, drained, a can of Ro-Tel tomatoes, some jarred jalapenos, and a bunch of cumin, chili powder, and salt.

WEDNESDAY
Pork ramen

We just had this, but I like it. I browned up some boneless pork ribs in olive oil, then sliced them thin, and then I cooked up some frozen stir fry veggies in the pork pan. I made a dozen or so soft-boiled eggs in the Instant Pot. The trick is to do a quick release after cooking, then dunk them in ice water, and then shells slide right off, almost in one piece. Not necessarily easier than using the stove, but a good trick if the stove is in use or if you really want unblemished whites.

 

I served a big pot of cheap ramen and let people choose pork, veggies, and eggs, plus sesame seeds, hot sauce, soy sauce, and chopped scallions.

Do you make fancy ramen? What do you add? I like this meal, but would like some more variety in the add-ins.

THURSDAY
French toast?

I am not sure. We had a pretty good storm going, and school was cancelled, but we got the news in the morning that my dad was going to need heart surgery, and was going to meet with the surgeons on this day.

So Damien and I rolled slowly north through the storm to the hospital while the kids managed at home. We had a good visit (the only thing my father requested was The Odyssey, Fagles translation) and I like the surgeon.

We thought we’d have to spend the night, but the snow slowed down toward evening, so we pushed ahead to get home, stopping only for Five Guys, because where else would you go on your way home from a visit to the cardiology wing?

I know this isn’t the popular opinion, but while their fries were quite good, I thought the burgers were just okay. The meat was kind of mealy, and the buns were just too greasy to be enjoyable. Huge portions, though. You can see that I am not complaining.

Then we trundled the rest of the way home through the last of the storm, and Damien installed me on the couch with a lot of red wine and The Big Lebowski.

FRIDAY
I think we are having beef stew.

We’ll say an extra decade of the rosary because it’s Friday, but I have this big hunk of beef going unheeded in the fridge, and it has been quite a week.

When is parish shopping fair game?

There’s such a thing as deciding to get over yourself, and remembering that the Mass is not about you. But we can also understand our own limitations, and work with them. You could make the case that it’s all right to leave one parish and find one that suits you better, even if you don’t have impressionable children.

Do you even deserve a new year? A quiz

A few questions are all that lie between you and x-treme self-knowledge.

How did you fare as a pet owner?

(a) After rescuing, spaying, and neutering all the chinchillas in the tri-county area, I have established a fellowship to fund chinchilla rescue, spaying and neutering in perpetuity.  Pretty soon, the chinchilla population will be so rescued, there won’t be any at all!

(b) The cat is now litter trained, and the dog now poops in the backyard.  Good enough for me.

(c) Petco, Petsmart, and the Humane Society have posted Polaroids of our family with “DO NOT LET US HAVE LIVING CREATURES NOT EVEN BETTA FISH” scrawled in marker underneath.
How are your people skills coming along?

(a) I don’t mean to brag, but Harry and Meghan?  My idea.

(b) I made it through Thanksgiving without getting in an argument with that one brother-in-law, and I’m proud that my kids saw that it’s possible to get along with people you don’t always agree with.

(c) If I can keep ahead of the sheriff until midnight, that will make only four restraining orders for the year.  Oopsie, that’s a battering ram, gotta go!
Get any exercise this year?

(a) Ohhh, you could say that.  My Nissan Leaf was weighed down by so many of those oval marathon stickers, I had to reclassify it as a light truck.

(b) I just made little changes:  taking the stairs instead of the elevator, parking on the outskirts of the parking lot.  Baby steps!

(c) I trained the dog to push the drink trolley over to my armchair.
What have you done to advance cultural literacy in your community?

(a) Since its debut six months ago, my groundbreaking “Shivs for Shakespeare” program decreased prison violence by 87% percent; and the Bolshoi Ballet is naming a new wrist gesture after me, in honor of my contributions to the overall exquisiteness of life.

(b) I joined one of those “let’s keep poetry alive” thingies on Facebook, and posted a Robert Frost poem that I’m fairly sure I understand (it’s ambiguous, right?  Two roads?  I remember ambiguity from college).

(c) One time somebody said it was “gering-ding-ding-ding-dinga-ding-ring!” and I was like lol moran its gering-ding-ding-ding-dingeringeding get it rite!
Done anything for the environment lately?

(a) This summer, I came across someone running the engine in her gas-guzzling minivan — just running the engine, not even going anywhere.  She spouted some anthropocentric nonsense about having to keep her disabled grandmother cool with air conditioning while she waited for the pharmacy to refill her heart medication prescription.  I showed them!  Grabbed the keys right out of the ignition, tossed ’em in the river.  I feel kind of bad about the river, though.

(b) I swore off buying cases of bottled water.  An aluminum water bottle works fine, once you get used to it.

(c) Someone from the Nature Conservancy came to my door looking for a donation, and I did not set him on fire.
Any progress in eating better?

(a) Two years ago, I swore off eating anything with eyes.  Last year, I increased my kale consumption by 600%.  This year, my goal is to eliminate anything salty, sweet, sour, or umami, or anything that I can sense with my teeth, tongue, or lips.

(b) I am a busy person, and have made my peace with frozen veggies and “semi-homemade.”

(c) I got a new slow cooker for Christmas and immediately Googled “crockpot moonshine.”
How’s the ol’ spiritual life?

(a) I have consecrated my life to the Sacred Heart, to The Immaculate Heart of Mary, and to Jesus through Mary.  That ought to cover it.

(b) No huge breakthroughs, but I think I’ve grown closer to God, and praying is easier.

(c) Last time I went to confession, the priest did not have to call for emergency back-up.

Have you broken yourself of the habit of ending things too abruptly without proper closure?

(a) Yes.

I just posted my most-read posts from 2017. It’s a good list, and thorough. (I’m just gonna keep telling that joke until it’s funny.) My most popular posts are not always the ones I’m most glad I wrote, though, so here are my own top ten favorite from 2017.

The best news is, I have not gotten the slightest bit better at making the world’s most terrible graphics! And I don’t intend to quit! Because I enjoy it!!!

2. So your favorite blogger has gone insane

If I said, “The clouds are dripping blood and the very grass under our feet has become like unto knives, because of what has transpired regarding that greatest martyr of our times, Kim Davis!” you’re all like, “YES. Preach it! Our Lady of Constant Sobbing, intercede for us!” and you share it with all your friends.

But if I say, “I see some serious problems with Donald Trump,” you’re all, “Oh, you poor thing, do you have lots and lots of secret cancer? I’ll pray for you.”

3. Mom? Dad? I think I’m politiqueer

You can’t make me say I’m on one grotesque side or the other grotesque side, and you can’t make me say that if I’m not one, I must be the other. As currently presented, neither one of them is anything worth being. There’s more to me than an assemblage of cruelty, extremism, and reflexive ideological posturing. Show me something good, and maybe I’ll vote for it. I’m a citizen of the United States of America, and I reject all the monsters.

So off we crept, and O YE GODS AND O YE LITTLE FISHES, what a horrible noise it made. It was a noise to freeze the marrow in your bones, a grinding, scraping, clattering, screeching squeal that proclaimed to all ears within fifty miles, “Here indeed are people who should not have a boat!”

6. Juicero Delenda Est

Heck, I can remember when Gee, Your Hair Smells Terrific was a product that normal people bought without shame. But when it’s a high end item that was in development for ten years, with millions of dollars in investment, for which they almost certainly employed a team of marketing and creative types to . . . you know, I once met a sedevacantist priest named Father Pulvermacher. I think that would have been a better name than “Juicero.” So that’s the first thing.

7. Say it again

She was once brilliant (quantum-physics-as-a-hobby brilliant) and startlingly witty, with no time for nonsense. But now she has Alzheimer’s, and all she has is time and nonsense. Now she says things like, “I can use that for a sunapat. Sunapat with a T. I don’t know, I’m falling out of a tree.” Her nonsense often has a desperate, frustrated air, as if she knows people don’t understand her and she needs to try even harder to get her message across.

But I did hear her, when she could speak. I did hear her, when I did not even realize I was listening. I heard her because she said the important things over and over again, muscling past bitter experience of being ignored, and saying what needed to be said.

8. Irrational fear doesn’t make us safer (even in Ikea)

I was so caught up in avoiding and outwitting irrational, unlikely dangers that I had no emotional energy left to tend to the actual, present needs of early childhood: the need for calm, the need for peace, the need for a little freedom, and the need to feel safe and secure, rather than embattled and in flight.

10. Homemade cake with a side of red herring

It’s a good thing to have standards. But it’s a bad thing to assume that “difficult” is the same as “virtuous.” Sometimes, we put obstacles in our own paths as way of proving our worth or our dedication. Difficulties, even unnecessary ones that we choose for ourselves, can make us stronger or keep us from sliding into apathy or mediocrity; but they can also be a wonderful red herring that distract us from pursuing our true vocations.

Just over a year ago, I went independent. I launched this site, started writing weekly for The Catholic Weekly, and started producing weekly podcasts.  Just over six months ago, I started writing monthly for America Magazine. A few months ago, I started writing every other month for my diocesan magazine, Parable.

I expected the first year as an independent contractor to be rough. But I am starting to think . . .

Do you know how lucky I am to do this for a living? I do! Every single day of my life I am grateful to you, my readers and friends, for making this thing possible. For supporting me on Patreon and through PayPal, for going the extra mile to use my affiliate links, for sending encouraging notes and leaving witty and interesting comments, for surprising me with the most generous and thoughtful gifts, for giving me ideas, for sharing my work, for listening to my podcast and laughing at my stupid jokes, for coming back after I piss you off, for correcting me when I go off the rails, for helping out with technical problems, and of course for alerting me when I meant “cloud” but wrote “butt” again. For praying for me and my family.

I am grateful for your patience as I learn how to do stuff on the fly, and as I leave stuff on the to-do list month after month. You are my absolute favorite readers. Because of you, it has been a good year. And thorough!

  1. The privilege of saying “no thanks” to NFP

Oh my dear. Poverty isn’t beans and rice and and a sweet little hut.

 Poverty is dirty needles in your kid’s play space. It’s lead poisoning and cockroach-induced asthma. It’s windows you never open, even though it’s sweltering hot and you can’t afford AC, because your drunk neighbors are screaming obscenities at each other and you don’t want that to be your children’s lullaby at night. Poverty means you never have silence, ever, because someone’s always blasting their bass so hard your walls shake, shrieking, endlessly revving their engines, or beating the crap out of each other.

2. Guest post: I was the perfect Catholic wife. It didn’t fix my abusive marriage

Why write about this? Because I believe that Catholic culture creates a dangerously optimistic expectation for marriage, encouraging people to strive and not give up, as if their effort can make any marriage thrive. For many many people, that is the best advice; but some of us live (or lived) in situations where covert abuse masked the hidden truth that one of the spouses in the marriage is too disordered (by sin, mental illness, addiction or other issues) to function in a Sacramental Union. Very often the faithful spouse suffers in isolation, feeling compelled to endure more abuse to be faithful to their marriage, family, Church.

3. Hey doctors: Big families are not on trial

I’m talking about women with many children being treated as if their wombs are a pandora’s box from which all ills and troubles flow. I’m talking about doctors behaving as if we’re nothing but a walking, whimpering uterus, and there is no sense in even discussing any other medical issue until we figure out how to put a cork in it.

4. When you give a man money, you don’t own a share in his soul

Once you have given the money, it is no longer yours. That’s what it means to give. If you give but still want to hang on, then you haven’t really given; you’ve just tried to buy a share in another human being. Charity doesn’t come with a rubber band that you can twitch any time you feel like it, making the other fellow dance to your ideals. That’s not giving. That’s investing, and we’re not supposed to treat other people like investment property.

5. The lady of Medjugorje is not your mother

So yes, there are good fruits. But nobody gets to pretend to be my mother. There aren’t enough good fruits in the world to justify sitting back and letting that happen.

If you care to see it, there’s mountain upon mountain of evidence that the apparitions are false — either a hoax perpetrated by the seers, or something diabolical.

6. IVF jewelry and the scandal of sentimentality

And so the mother does the thing that makes the most sense to a pagan, when nature fails her: She bows to artifice, and finds a way to bring her children with her, clumsily, sentimentally, but grasping at something that seems true: We are made to be with the ones we love. We are supposed to be able to give them life, and to keep them safe.

She knows they are her children. But does she know what children are?

In order to turn embryos into jewelry, one must believe that all children, and all people, can be made safe. One must believe there is such a thing as safety in this world.

7. They said my kids don’t belong at Mass. Now what?

Incredibly, the complainer sought her out after Mass to double down and say it again: Your children don’t belong here. Do not bring them here.

Let’s be clear: This is a message straight from Hell. The Mass is humanity’s main source of grace and life, and if no one goes, then no one will have grace or life. Telling parents their kids don’t belong at Mass is like trampling down every seedling you find, then clucking your tongue over the poor harvest.

8. Unpopular opinion: That Boylan Catholic High prom dress code is actually fine

This dress code acknowledges that any modesty guidelines are going to have shortcomings, because of what a subjective thing modesty is, and it does girls and parents the favor of asking them to “not put school administrators in the difficult position of upholding school standards.”

In other words, it asks them to think about and uphold those standards themselves. To behave as adults, and not to throw a temper tantrum over their sacred civil right to have a cut-out heart on their ass. “We’re all in this together,” is the basic message, “So please help us have a nice time at the dance, rather than turning this into one more exhausting battle over stupid stuff.”

No dice, Boylan Catholic. The internet chooses temper tantrum every time.

Griffith says it’s incredibly painful to see the destruction of the book she worked on for years, the site she founded, and the community she fostered. But “the book makes him appear a trustworthy spiritual guide,” she says. People assumed he was reliable because she associated with him, she says.

“I hate to think he’d use that to groom someone else. I’m not going to provide a henhouse for him to raid.”

So you got an Instant Pot for Christmas

Congratulations! You’re the new owner of a gorgeous, gleaming, rather intimidating Instant Pot.

It can be a little overwhelming at first. Not to worry! There’s an entire community of seasoned Instant Potheads who are ready and willing to guide you through your first few recipes.

A few of the most commonly asked questions are easy to answer. For instance:

Q. Why is there steam coming out?
A. Because you left the steam valve open.

Q. Why does my machine say “BURN?”
A. Because it is burning.

Q. All the recipes say to press the “pressure level” button, but I can’t find it anywhere on my machine!
A. This is because your otherwise intelligent husband has bought you a slow cooker for Christmas.

Q. I’ve just made a savory dish with lots of onion, garlic, and cumin, and I want to make rice custard next. Will the silicone ring pick up the smells and transfer them to other foods?

A. If you have an IP Chachacha-9000, no, it will not. Your IPC9K is equipped with Olfactogard™ technology, which negates smell molecules by harnessing the power of snozz. You should be able to move seamlessly from meat to custard and back again, just like when you were young.

If you’re concerned, though, simply remove the original ring and stuff a sock up in there (black is best, but you know your tastes) and proceed as normal.

Q. Where is the best place to store my Instant Pot?

A. You can store it anywhere. Some folks may worry that leaving an Instant Pot on the stovetop is inviting disaster, and that one careless knock of the stove dial may melt your expensive new appliance into oblivion before you even realize what’s happening, but this is largely an urban legend. You’re different, and this will never, ever happen to you.

Q. I know the Instant Pot works by building up pressure under a tight seal, but it’s so hard to let my food cook without checking on it. Can’t I just take a little peek?

A Oh, you scamp! Of course you can.  Just make it quick and no one will know the difference. Make sure you put your face nice and close so you don’t miss anything.

 

Q. My Instant Pot is dented, but it appears to be only on the outside. Is it still safe?

A. Maybe, or maybe not. The exterior housing is largely to for structural, hygienic, and aesthetic purposes, but there may be interior damage that’s not obvious at first.

Test it for soundness by situating your IP with the dent facing away from you. Tap it lightly with a wooden spoon, listen for an echo, tap again, give it a gentle shake, then casually knock it onto the floor as if by accident, and then suddenly let loose, jumping on it a few times while sobbing, “You bastard! You bastard! I never shoulda trusted you, but I’m just too soft, that’s what’s wrong with me!” Then throw it out the window, pick your way over the broken glass, get in your van, and run over it a few times while the mailman watches with his mouth hanging open. Open the cover and whisper into your Instant Pot, “I’m just too soft, that’s all,” and shake your head while your nose runs into your apron pocket.

Pick up your Instant Pot and carefully examine the condensation collector at the base. If it appears to be misaligned, your IP is probably not safe to use.

Q. Can I do canning in my Instant Pot?

A. Yes, sure, because everyone wants canned food.
